So Christmastime always seems like the perfect time for cinnamon rolls, and I usually have the ones you just separate and put in the oven, but today all I had was some dough, so I used a semi-homemade recipe to make these. My neighbour is testing my resolve to not eat sweets Mon-Fri. She just dropped by to return my non-tupperware from when I made cinnamon rolls.

julesG @wanderinglynn Heat wave broke 10(?) days ago. One day it was 37°C, the next 17°C. Has had a huge impact on my health - now I have hay-fever and a cold. It's 14C today, but supposed to be 27C again by next week. 5y

A little spammy today but I really need to share this: I made gluten free cinnamon rolls without the gums that many celiac sufferers can't handle because their poor guts are destroyed by the disease.

I also learned that gluten free bread dough will double proof just fine, as evidenced by my ginormous roll. I went in thinking it was super fragile but really I could have rolled that dough right up like it was wheat based.

And now I has a fat. 😁

SamanthaMarie Do you have a recipe you used?! I'm always on the hunt for a good gf cinnamon roll recipe. They are my husbands favorites and I can't ever quite get them how I want them. 5y

CampbellTaraL @SamanthaMarie Yes! I adapted the Red Star yeast recipe by adding 2TBS psyllium husk powder to the flour (gluten replacement), an extra egg, and doubled the water (GF flours need a lot more water than wheat flour). The mixture should be a sticky cake batter consistency, but don't worry, after it rises it will be soft and pliable with the flour to roll it out on.
