Reggie Just listeners to this on my way to Alb earlier today. I just picked up The Best American Food Writing2019 and then read that Rachel Ray interview in the other book which I will pick up later. I always had something stuck in my craw about her(I don‘t know why) but after that interview I kinda like and respect her more. Very lovely episode. 4y

Peanut Butter Chess Pie from the new Sean Brock cookbook - South. The recipes in South by Sean Brock focus on perfecting the craft for the best version of old standards. You can feel Sean's painstaking attention to detail in the recipes as well. I was thrilled to find some creative spins on desserts and knew I needed to make this pie, especially since it had a chocolate cornmeal crust. ⤵️

ReadingEnvy I followed the directions carefully for this pie, which meant a lot more fridge time than I would normally give a pie. I'm not sure if I made it right but the insides settle into a pecan pie like center without the nuts, topped by some peanut butter cakey layer, which is topped with ganache. The crust rolled out beautifully after letting it chill as recommended. ⤵️ 5y

Traditional southern dishes are given a unique twist in the new cookbook from Sean Brock! Most of these recipes require advance planning and several ingredients (a few that aren't widely available at the local chain store). While it may not be a go-to book for weeknight meals, it'll appeal to those who enjoy spending free time cooking.
(Pictured here is my take on the cheeseburger with special sauce that I modified a bit)

I've been recipe testing and working on a review for this cookbook this week.
Loved the fried green tomato recipe which called for refrigerating the battered slices before frying instead of using an egg wash. They came out lovely, golden, and crisp!
