Eating in the Middle
Eating in the Middle: A Mostly Wholesome Cookbook | Andie Mitchell
8 posts | 4 read | 2 to read
In her inspiring New York Times bestselling memoir, It Was Me All Along, Andie Mitchell chronicled her struggles with obesity, losing weight, and finding balance. Now, in her debut cookbook, she gives readers the dishes that helped her reach her goals and maintain her new size. In 80 recipes, she shows how she eats: mostly healthy meals that are packed with flavor, like Lemon Roasted Chicken with Moroccan Couscous and Butternut Squash Salad with Kale and Pomegranate, and then the sometimes foods, the indulgences such as Peanut Butter Mousse Pie with Marshmallow Whipped Cream, because life just needs dessert. With 75 photographs and Andies beautiful storytelling, Eating in the Middle is the perfect cookbook for anyone looking to find freedom from cravings while still loving and enjoying every meal to the fullest.

Great cookbook! I've tried a couple recipes, the tofu and veggies was delicious-even my teens liked it! ⭐️⭐️⭐️⭐️

I've made the Chocolate Raspberry Breakfast Pudding (such a hit, I've made it twice), and the Loaded Black Bean Burgers (tasty), but there's no other recipe I'd like to try. People who are calorie counting or working to maintain a large weight loss will likely find this beautifully photographed cookbook inspirational.

megt That looks delicious! 7y
Varshitha Looks yum😋.. Is that by any change chocolate chia seeds pudding?? 7y
Lindy @Varshitha Yes, it's got chia seeds. Magic goodness. 😋 7y
Varshitha I need to try this, looks so yum.. I usually add chia seeds to my overnight oats .. 7y
Lindy @Varshitha A chia/oatmeal combo would be good! Mitchell's recipe:1.5 cups almond milk, 1.5 cups Greek yogurt, 3 tablespoons cocoa powder, 4 tablespoons maple syrup, 1/3 cup chia seeds. Whisk. Let sit overnight. 7y

Coconut Oatmeal Cookies with Caramel Drizzle.
(The sign of a good recipe? They look *just like* the photo in the cookbook!)
