Ten Restaurants That Changed America
Ten Restaurants That Changed America | Paul Freedman
6 posts | 5 read | 1 reading | 7 to read
From Delmonicos to Sylvias to Chez Panisse, a daring and original history of dining out in America as told through ten legendary restaurants. Combining a historians rigor with a foodie s palate, Ten Restaurants That Changed America reveals how the history of our restaurants reflects nothing less than the history of America itself. Whether charting the rise of our love affair with Chinese food through San Franciscos fabled The Mandarin, evoking the richness of Italian food through Mamma Leones, or chronicling the rise and fall of French haute cuisine through Henri Souls Le Pavillon, food historian Paul Freedman uses each restaurant to tell a wider story of race and class, immigration and assimilation. Freedman also treats us to a scintillating history of the then-revolutionary Schraffts, a chain of convivial lunch spots that catered to women, and that bygone favorite, Howard Johnsons, which pioneered midcentury, on-the-road dining, only to be swept aside by McDonald's. Lavishly designed with more than 100 photographs and images, including original menus, Ten Restaurants That Changed America is a significant and highly entertaining social history.

Really enjoyed this! Some restaurants charmed me more than others, but each had a good story. I loved the (too brief) nods to the history of women and restaurant dining in the US (I need a whole book about "ice cream saloons")/the influence of African American cooking on restaurant culture & cuisine (recommendations, anyone?). I've only eaten at one of these places (Chez Panisse ❤️), but this made me feel like I had experienced all of the others.

Lindy For African American influence, I've been meaning to read 7y
Christine @Lindy Oh true, thanks! I have that on library hold. 7y

If I could just stop watching the train wreck I might believe #allisnotlost. But I'm glued to MSNBC and Twitter . I need to turn off and read.

Laalaleighh You and me both. Glued to Fb and the news. My therapist literally told me to take a weeklong break before I make myself too anxious to function. I was like- what if I go unplug for a week and come back to find out I've lost all my reproductive rights and we're at war with China? 😭😭😭😭😭😭😭😭😭😭 8y

This is probably the best food history book I've read this year.
