Under Pressure
Under Pressure: Cooking Sous Vide | Thomas Keller
3 posts | 1 to read
A revolution in cooking Sous vide is the culinary innovation that has everyone in the food world talking. In this revolutionary new cookbook, Thomas Keller, America's most respected chef, explains why this foolproof technique, which involves cooking at precise temperatures below simmering, yields results that other culinary methods cannot. For the first time, one can achieve short ribs that are meltingly tender even when cooked medium rare. Fish, which has a small window of doneness, is easier to finesse, and shellfish stays succulent no matter how long it's been on the stove. Fruit and vegetables benefit, too, retaining color and flavor while undergoing remarkable transformations in texture. The secret to sous vide is in discovering the precise amount of heat required to achieve the most sublime results. Through years of trial and error, Keller and his chefs de cuisine have blazed the trail to perfectionand they show the way in this collection of never-before-published recipes from his landmark restaurantsThe French Laundry in Napa Valley and per se in New York. With an introduction by the eminent food-science writer Harold McGee, and artful photography by Deborah Jones, who photographed Keller's best-selling The French Laundry Cookbook, this book will be a must for every culinary professional and anyone who wants to up the ante and experience food at the highest level.

I love you all, but I‘m sitting here with 8 books to read before the end of January to keep on track with my reading goals and with everyone already posting February book spin lists and proposed TBRs, I started to panic. So, instead of reading last night, I worked in my spreadsheet for February. :sigh:

Kalalalatja Considering you are reading The Count of Monte Cristo, I would say you are doing AWESOME! I couldn‘t focus on other books while reading it, and it is a chunkster! 3y
AmyG Reading should be fun. Don‘t beat up on yourself. 3y
vivastory Going to echo these wise people 👆 3y

charl08 TCoMC is huge. Kudos! 3y
Hooked_on_books No, don‘t panic! Never compare to others and don‘t worry about some arbitrary number you picked out. If you‘re enjoying your books and your reading experiences, then you‘re doing it right! 3y
Megabooks I completely understand what you‘re saying because sometimes I panic about reading goals too, especially at the start of the year. But then I remind myself what @Hooked_on_books said!! 3y
DGRachel @Megabooks Thank you! This is the first year in forever that Goodreads tells me “you are X number of books behind schedule” this early in the game and I‘m honestly a little queasy. I know I shouldn‘t put pressure on myself but I really wanted to break 50K pages and play along with a couple of Litsy challenges. But...oof. 3y
marleed I changed my 2021 reading goals so that instead of concentrating on book count I‘m trying to read with more intention. I‘ve read fewer books this months but I have what I read room to breathe and hopefully I‘ll recall them better at year‘s end! 3y
Texreader After feeling a lot of pressure last year I entered this year with similar goals but different expectations—much more relaxed and easy going. 3y
SamAnne @DGRachel I have not read one book this month. Maybe I‘ve read 50 pages. Glued to the news, worried about my country, not feeling well, crazy work schedule. 5 books behind on Goodreads! I‘ve decided to dial back on the group reads and focus exactly what I want to read. Will participate in a few that line up with my TBR. (edited) 3y
DGRachel @SamAnne I get that. I‘m not yet ready to give up on the Litsy challenges, but next year I will probably go back to what I did last year - set up my own monthly suggested themes, listing books I already own, and use that as a guide, while giving myself the grace to read whatever I feel like in the moment. 3y

If you‘ve never come within days of being kicked out of grad school because you haven‘t defended your dissertation (or some similar activity), then you probably don‘t understand pressure or procrastination. I don‘t recommend doing this. #pressure #Quotsy #QuotsyMarch18 #LitsyQuoteChallenge
