100 Recipes: The Absolute Best Ways to Make the True Essentials | America's Test Kitchen
2 posts | 1 read
A provocative, handpicked collection of relevant (and surprising) essential recipes for today's cook. We have countless recipes at our disposal today but what are the real keepers, the ones that don't just feed us when we're hungry or impress our friends on Saturday night, but inspire us to get into the kitchen? At the forefront of American cooking for more than 20 years, the editors at America's Test Kitchen have answered this question in an essential collection of recipes that you won't find anywhere else: 100 Recipes Everyone Should Know How to Make. Organized into three recipe sections--Absolute Essentials, Surprising Essentials, and Global Essentials--each recipe is preceded by a thought-provoking essay that positions the dish. For example, Treating Pasta Like Rice Simplifies Everything; A Covered Pot Is a Surprisingly Good Place to Roast a Chicken; and Re-imagine Pie in a Skillet to Simplify the Process. You'll find useful workday recipes like a killer tomato sauce that's almost as easy as opening a jar of the store-bought stuff; genius techniques for producing amazing flavor--try poaching chicken breasts over a garlic-and-soy- spiked brine (trust us, it's that good); and familiar favorites reinvigorated--the best beef stew comes from Spain (and it's even easier to make than the stateside stew you've been eating for years). Gorgeous photography (shot right in the test kitchen) accompanies every recipe, revealing the finished dish as well as highlights of its preparation. Likely to stir debate among anyone interested in food and cooking, 100 Recipes Everyone Should Know How to Make provides a snapshot of how we cook today and will galvanize even the most jaded cook to get into the kitchen.

So everyone has a signature dish apparently.

So for my personal interest I am intrigued to find out which would you personally say is yours.

Which dish, bake, or product would you say you are most associated with?

This will also help with #feedareader @MinDea @TricksyTails

cobwebmoth I'm primarily known for my cupcakes. I even did them for a wedding this year.🙂 7y
AmyG I have a chocolate cake (very easy to make), a noodle pudding (called Kugel..has dairy) and a challah french toast (used with challah bread and baked). These are the recipies people ask for the most. I am not known for my culinary skills. ;) 7y
claffy_reads Either bread/rolls or toll House cookie pie. I'm not much of a cook! 7y

Itchyfeetreader If it comes in one pot and takes ages to cook then it‘s probably come from my kitchen 😂 7y
KarouBlue Baked goods - homemade croissants, cinnamon rolls, whiskey cake, creme brûlée, etc. 7y
Leelee.reads Pies. Can you believe there isn‘t a pie emoji? I make crust from scratch and my go-to fillings are homemade apple, chocolate, lemon and (for the two weeks they seem to be in season) peach. Oh and chocolate peanut-butter. And pecan with a bit of bourbon and chocolate. I love pie. 😄 7y
Eggs I have frequently been lauded for my chocolate mousse... 7y
buecherwurm I'm normally asked to do cakes and will then just try anything. Mostly I'm doing a very simple chocolate cake which I don't really have a recipe for but which I can modify so it's lactose-free, vegan etc, whatever is necessary 7y
TricksyTails I'm more known for my eating skills! 😂 @thecomfykitchen @Leelee.reads I'm coming over to your houses!! 😋 7y
Kappadeemom I am a Southern gal, so Southern food is my specialty. I also have 6 kids that are 21-16 years old, so I can make a big casserole that will make the lunch lady jealous 👍 7y
Dolly @Leelee.reads 🥧 the newest version has one. Pie lovers unite, we are fierce! 😁 7y
Leelee.reads @Dolly Guess I need to do the update! @TricksyTails if there is a Litsy meet up that includes the both of us, I‘ll bring pie! 😄 7y
TricksyTails @Leelee.reads 🙌😋 7y
benchley1 I don't have one, but usually I'm in charge of ice cream or cookies . For the boyfriends friends though, white girl salsa. 7y
Pamwurtzler Okay, @benchley1 , white girl salsa??? 😀 7y
benchley1 @Pamwurtzler so, my mom is Mexican, her former coworker who was super white (blonde, blue eyes, burns in the sun) made this really good and easy salsa...so that's what we randomly call it. It's just a jar or salsa.verde and salsa casera jazzed up with fresh stuff, but everyone loves it 7y
Pamwurtzler @benchley1 Sounds good to me! Also my signature dish lately is salami wrapped asparagus- smear some cream cheese on a piece of salami, wrap it around a stalk of asparagus. Repeat until you run out of one or the other. Bake them at 400 for 15 minutes or so. 7y
mabell Ooo I think ours would be my husband's toasted ravioli or ribs ❤️ We also are known for our nachos and homemade pizza. We like to eat 😀 7y

Can we blurb cookbooks? This pie is no joke. Subbed in smoked maple syrup. Pair with peaty Scotch?
