I baked a cake today to banish the cold dreary weather: Finnish kermakakku (sour cream cake) made with spruce sugar and served with spruce ice cream. It‘s not too sweet, perfect for afternoon tea.

Lindy @alanacristin Yes, I make all kinds of things with spruce tips: sugar, salt, ice cream, vinegar, mayonnaise, tea and extract are the ones that come immediately to mind. 6y

Lindy @alanacristin Sure you can cook with blue spruce. Just the soft new growth, and you don‘t need much. Taste a bit; it‘s fresh and lemony. 6y

Lindy @MissHel Yes! The spruce cookies are back by popular demand from my family. I make spruce sugar in the spring, mixing chopped young spruce candles with sugar, store it away, and then use a little in the cookies, plus roll the cookie balls in it before baking. The spruce cookies are also flavoured with angelica root extract, something I made this year in a project to make my own bitters. 7y

Lindy @I-read-and-eat @LeahBergen I've been making the cinnamon cardamom nuggets for 30 years. Love them the best. This year, I made cardamom extract as part of a project to make my own bitters, so I put a little in the cookies. Takes perfection to a whole new level. 😊 7y

ReadingEnvy Spruce...Candles? Is that a part of the tree? I'm intrigued!! I made a cardamom-hazelnut butter cookies that has been rolled in powdered sugar after baking. 7y

Lindy @ReadingEnvy The new flush of growth in the spring is called a candle. Some people call them tips or buds. Pick them when they are still very soft, and make spruce tip salt, sugar, vinegar, ice cream, tea, mayo... or whatever. It's tasty! The cardamom hazelnut combo sounds divine. 7y
