A sustainable lifestyle starts in the kitchen with these use-what-you-have, spend-less-money recipes and tips, from the friendly voice behind @ZeroWasteChef. In her decade of living with as little plastic, food waste, and stuff as possible, Anne-Marie Bonneau, who blogs under the moniker Zero-Waste Chef, has learned that "zero-waste" is above all an intention, not a hard-and-fast rule. Because, while one person eliminating all their waste is great, if thousands of people do 20 percent better it will have a much bigger impact on the planet. The good news is you likely already have all the tools you need to begin to create your own change at home, especially in the kitchen. In her debut book, Bonneau gives readers the facts to motivate them to do better, the simple (and usually free) fixes to ease them into wasting less--you can, for example, banish plastic wrap by simply inverting a plate over your leftovers--and, finally, the recipes and strategies to turn them into more sustainable, money-saving cooks. Rescue a loaf from the landfill by making Mexican Hot Chocolate Bread Pudding, or revive some sad greens to make a pesto. Save five bucks (and the plastic tub) at the supermarket with Yes Whey, You Can Make Ricotta Cheese, then use the cheese in a galette and the leftover whey to make sourdough tortillas. With 75 vegan and vegetarian recipes for cooking with scraps, creating fermented staples, and using up all your groceries before they become waste--including end-of-recipe tips on what to do with your ingredients next--Bonneau lays out an attainable vision of a zero-waste kitchen.

My daughter got a bushel of apple seconds cheap from the farm stand where she used to work and we made applesauce. And since I‘ve been reading zero waste cookbooks for the past few years, we made apple syrup from the cooking water and are attempting to make ACV from the apple cores. Oughta be interesting!

Aimeesue @KateReadsYA There are sooo many zero waste accounts on Insta I follow that have been helpful. 0 waste chef is 1 but there‘s lots. We thrift A LOT- I hardly ever buy things new. I got a subscription to Mighty Nest for my birthday one year - they send a sustainable item to try every month. I started using toothpaste tablets after they sent some, and my dentist was very impressed with my dental hygiene this last visit. 😂 3mo
Aimeesue Most of those jars were from thrift stores. I did buy the plastic caps though, because the 2-piece lids and rings tend to rust. 3mo

Aimeesue @KateReadsYA there are SO many different tops for Ball jars now. I also have some that have a pour spout that closes for syrup or salad dressing type stuff. 3mo

This book is a combination zero-waste manual and cookbook. I‘ve read most of the first part before (on the author‘s blog and Instagram) but I still liked it. I appreciate how she puts a big emphasis on making small changes, not that you have to overhaul everything at once. Somehow this book is what finally inspired me to get a composter! I didn‘t get a chance to really try the recipes but there are several that really intrigue me. (Continued…)

Clare-Dragonfly I got this from the library but I think I‘ll have to buy a copy so I can try all those recipes! The sourdough pizza and sourdough discard brownies are at the top of my list. 😋 3y

I wanted to make this Swiss chard recipe. But then I found that I had no chard, so I chose kale. I ended up basically following this recipe but also cooking the kale in the exact same way I always cook kale 😆 It is yummy! I still need to try it with chard. Hopefully we‘ll get more chard in next week‘s CSA share and I can do that.

I‘ve been making apple scrap vinegar (this recipe, along with many others, is available on zerowastechef.com) for a couple of years now, saving the cores from the apples my family and I eat. We love apples! 🍎😋

#libraryhaul! First of all, my library is now open for regular hold pickups instead of having to schedule a contactless pickup, which is really cool 😁 Second of all, the Zero-Waste Chef got me into sourdough baking before it was cool, so I‘m excited to read her book!
