Yet another recipe from the tagged cookbook: Moroccan Lentil and Chickpea Soup. Not a super pretty photo (I should have taken the time to wipe the sides of the bowl), but it was a very yummy soup. Almost every recipe we've tried from this book has been a winner. Bonus: this one used up a good bit of the massive amount of parsley and cilantro we've been getting from our CSA.

ImperfectCJ @Liz_M Yep, vegan. It's actually geared toward those transitioning to vegan, so it provides options for dairy and non-dairy ingredients in some recipes, but every recipe defaults to totally vegan without culinary acrobatics. 4y

So, it's not the most attractive meal (not helped by the lighting), but it tasted quite yummy. This is our third recipe from the tagged cookbook: Creamy Cashew Mac and Cheese, which I made GF using rice fusilli and served with roasted cauliflower and broccoli. The sauce was saucier than I expected based on the photo in the book, but I liked it.

Second recipe from the tagged cookbook: Baja-style Cauliflower Tacos. I didn't have all the ingredients for the called-for cilantro sauce, but the combo of the roasted battered cauliflower and the mango slaw was quite tasty. Our store-bought corn tortillas were not up to the challenge, so if I make this again, I might get ambitious and make homemade tortillas. Kind of a lot of work for a quick meal, though.

ImperfectCJ @ValerieAndBooks I really like their approach...a flexible, low-pressure intro to plant-based meals with a focus on umami flavors often missing from vegan recipes. I learned about it through an online program through bookshop.org, I think, and bought the book after watching the talk/program. 4y
Lauram That looks really yummy. I own loads of ATK cookbooks. It would be fun to have a Litsy cookbook club. We can all try a recipe and post a review. 4y

First recipe from the tagged book: Vegetable Tagine with Chickpeas and Olives. Very, very tasty and pretty quick to make. Next week: Baja-style Cauliflower Tacos.
