3 posts | 1 read | 1 to read
Denis Cotter's acclaimed collection of superb vegetarian recipes and evocative tales is now available in paperback.Wild Garlic, Gooseberries and Me cajoles, informs and questions our relationship to the land and the vegetables we eat. We go on a personal journey with Denis as he shares his passion for his favourite foods.Denis drags us into muddy fields and introduces us to the growers of the best produce imaginable. Through heart-felt and charming text, he informs and amuses. The excitement of a robust blackberry jam becomes a passionate argument for us to go out into the countryside, the dazzling sight of high-trailing borlotti beans ignites a discussion on the future of artisan growing.Whether creating a restaurant masterpiece or foraging in hedgerows and woods, Denis searches for a new connection between food, people and land ... oh, and he also teaches you how to search for mushrooms, wild greens and sloes, how to cook asparagus and take on an artichoke with attitude.Divided into four themed chapters, 'It's a Green Thing', 'Wild Pickings', 'A Passionate Pursuit' and 'Growing in the Dark', each including information and anecdotes about the vegetables that feature as well as many delicious recipes. There are simple salads and soups as well as more challenging main meals and mouth-watering desserts.Recipes include: Fresh Pasta with Abyssinian Cabbage, Pine Nuts & Sheep's Dressing; Courgette Flower, Pea and Chive Risotto; Samphire Tempura with Coriander Yoghurt; Grilled Portobello Mushrooms with Potato Pancakes and Tarragon Cream; Cabbage Timbale of Celeriac and Chestnuts with Porcini and Oyster Mushroom SauceStunning images of the landscape, the food and the finished recipes complete this delightful read and unique recipe book.

This is wonderful! Half recipe book, half "about my relationship with the vegetables I cook with ... and the people who grow them."

The author is a chef in Cork, Ireland. His writing is funny, sarcastic and enthusiastic and he really does make you want to get out and try growing or cooking the local veggies he mentions, whether underrated (broad beans & suede turnips!) or more tricky to grow. The man has no time for seaweed though!

SilversReviews I would love this book. Love garlic. Reminds me that I need to plant mine. 😎 7y
rockpools @SilversReviews Hopefully it'll inspire me to get my gardening life together! And yes, I need to put garlic in in a bit too 🙂 7y
SilversReviews @RachelO Fresh garlic in recipes is my favorite 7y

This is a rather lovely book from South-West Ireland. Cotter is a restaurant owner who uses mainly locally-sourced produce. As Cork & Devon have a similar climate (🌦🌬🌦💦🌦) I think it was bought for me so I could grow stuff on the allotment then cook amazing things.

🤣😂🙃 Yeah. Maybe one day I'll progress beyond potatoes! The 🥔 🥔 are fab, mind!

Cinfhen Pretty photo! I've never had a gooseberry 😊seems exotic 7y
monkeygirlsmama Oooh my grandparents used to have gooseberry bushes. Mmmm I miss those things. 7y
rockpools @monkeygirlsmama @Cinfhen Exotic sounds 😂😂😂 - they seem old-fashioned here I think. They are totally the sort of thing your gran used to grow in the UK - where were your folks based? I actually inherited a couple of bushes on the allotment & did gooseberry crumble last year 😋But you never see them in the shops, so maybe they are becoming rarer! (edited) 7y
monkeygirlsmama @RachelO My grandparents were in the States, Pennsylvania to be exact. Only place I ever saw or tried them. 7y
rockpools @monkeygirlsmama I'm obviously going to have to try harder & take more care of mine next year! The prickles are something else though! 7y
