tpixie @RachelO tho I Love the barefoot contessa, had to add a few things.I read it's best to "poach" the chicken So did instead of roasting. I boiled the water( 4shallots, 2celery stalks, 2carrots),&turned heat to low & simmered the 2breasts with bone&skin about 30 minutes. shred breasts in my KitchenAid stand mixer To mayo, added 1 tsp ea Dijon mustard & dill, 1 Apple with juice of one lemon squeezed on,&1 cup chopped cashews. No idea Veronique part! 7y
