tpixie @Bookworm54 thanks! I wish I had made it yesterday so it could set a little longer. Hopefully it turns out good!! It‘s Barefoot Contessa though so that‘s pretty trustworthy! The recipe also calls for kale but I know the people that we are eating with would not want that! (edited) 2y

tpixie @rockpools there were my mom‘s & are my sister‘s favorite go- to cookbooks , so I like cooking from them as a family tradition. If you like it, you should try her Perfect roasted chicken & oh my! Her French Onion Dip 2y

This is fun. It‘s a ‘facsimile‘ cookbook, complete with doodles, notes & sarcy comments, & a whole bunch of traditional(ish) Scottish recipes.

In shock news, today I actually made the breakfast baps from it, along with Delia‘s leek & potato soup. In more shock news, I‘d do both again!

rockpools @Pageturner1 Aw, thanks! A bap is a type of bread roll - not entirely sure mine were as they should be. I‘ve always thought of them as soft and flat, but mine came out quite crispy. Edible though 😂😂 (I‘m not the world‘s best cook - I have pretty low expectations!!) 4y
rockpools @Crinoline_Laphroaig My gran used to have The Country Diary - I loved poring over it when I was little. So pretty! I think this is compiled from a long-running newspaper column/something rather than being a genuine ‘found‘ cookbook - but it‘s still lots of fun & real recipes @LeahBergen 4y

rockpools Oh my! That *was* a few years ago. I should give it another go really. I‘m still the world‘s least enthusiastic cook, I still get gifted a beautiful new cookbook twice a year, and they‘re still neglected! I share a house with my mum who has numerous dietary requirements, which I don‘t have the skills/enthusiasm to work round, so I end up cooking the same things over and over... 4y

A #puremorning starts with breakfast... Delicious French toast on page 127 specifically... 😋

Seriously though, this cook book is amazing. Super simple recipes, with basic ingredients, and easy to follow instructions. As someone who learned to appreciate the culinary arts much later in life, this book has been a life saver.

tpixie 1 (5 to 6 pound) roasting chicken
• Kosher salt
• Freshly ground black pepper
• 1 large bunch fresh thyme, plus 20 sprigs
• 1 lemon, halved
• 1 head garlic, cut in half crosswise
• 2 tablespoons (1/4 stick) butter, melted
• 1 large yellow onion, thickly sliced
• 4 carrots cut into 2-inch chunks
• 1 bulb of fennel, tops removed, and cut into wedges
• Olive oil

tpixie 1. Preheat the oven to 425 degrees F.
2. Cut up & Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan. 3. Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken.

tpixie 4. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. 
5. Place the chicken on top.
6. Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh.

tpixie 7. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. 
8. Slice the chicken onto a platter and serve it with the vegetables.

tpixie @EchoLogical hope you enjoy! It makes the house smell great too!! I know it's so easy to buy a roasted chicken from the grocery store now but I think it still has less salt and just more natural flavoring. 7y
