The Green Roasting Tin
The Green Roasting Tin | Rukmini Iyer
4 posts | 4 to read
With the seventy-five recipes in this book - half vegan, half vegetarian - you simply pop your ingredients in a tin and let the oven do the work. Every recipe is vegan or vegetarian (with an option to make it vegan), and all of them are simple, healthy and delicious. This fast and fuss-free formula is perfect for anyone who wants to cook more easy vegetarian and vegan meals day-to-day. With four recipes for every vegetable and helpful infographics, there is something for everyone. The recipes, which span super-greens to indulgent chillis, take flavour inspiration from around the world. For example: Miso aubergine with chilli, pak choi, tofu and peanuts. Three bean chilli with avocado, chipotle and coriander. Beetroot, chickpea and coconut curry with flatbreads and coconut yogurt. These quick, clever and delicious recipes are for anyone who wants to eat nutritious food made from scratch that fits around their busy lives (and for anyone who doesn't like washing-up).

Gifting my Mum this #cookbook later on in January as it's her birthday. She's actually a pescetarian but it's easier to get her a veggie one than trying to find a book with enough fishy recipes. #newyearnewyou @Eggs

veritysalter I have the non vegetarian version, it‘s a fab book. I love a tray bake. ♥️ 5y

Look what was waiting for me when I got back from holiday! I bought the original roasting tin book for myself for my birthday in January (after trying a few recipes out from online) and it‘s my most used cookbook this year. I can‘t wait to try out this new one and add some more veggie treats to my repertoire!

Slajaunie We are going to try this one! Thanks for sharing. 6y
Verity @Slajaunie I‘m not sure what I‘m going to cook first - so many options. Yum. 6y
rockpools This sounds like my type of cookbook! 6y

Verity @RachelO it‘s really neatly done too: split into two vegan and vegetarian and the the sections are broken down into quick (30mins cooking or less) medium (up to an hour) and slow (more than an hour). And it all looks delicious. There‘s a couple of recipes from it available on the web - do you want me to find you a link? 6y
rockpools @Verity If you happen to have time, that'd be great! Thanks 😊 6y
Verity @RachelO turns out it‘s a veggie recipe from the first cookbook - but i think it gives an idea of her sort of style. https://thehappyfoodie.co.uk/recipes/bulgur-wheat-with-roasted-red-peppers-tomat... 6y
rockpools @Verity Brilliant- thank you- I hadn't found this. Definitely need a peek at this book. Veggie 'shove it in the oven' is my preferred way of cooking- having actual recipes along those lines could only be a good thing 😁 6y
Verity @RachelO there are a bunch of recipes linked on the happy foodie email this week: you should be able to get to them from this one (which looks delicious and is on my to-cook list) https://thehappyfoodie.co.uk/recipes/escalivada?utm_medium=email&utm_source=The%... 6y
rockpools @Verity Ooh - they look good. Thank you! I'd like to try the gnocchi one 😋 6y
