@tournevis This is my attempt at pot-en-pot and I have the nagging feeling that I got it wrong, although it was perfectly nice to eat.
I am thinking that perhaps “big potatoes“ are bigger for the writer than for me because my dish looks stingey on the potato front.
I assumed the final stage was baking because we were told to layer the ingredients. So, I did it in a pyrex dish fitted with a lid.

Dilara The things on top are poutines blanches (p 47). So, they were steamed from the bottom and baked on top. In hindsight, I think that maybe the dish was supposed to cook on a stovetop from beginning to end. Also, that I should have added some liquid at some point because there was none left by the end 😁And that teaspoon measurements were non standard b/c the dumplings had a slight soapy taste (too much baking powder) & were quite salty 😅 😂 2d

Here's my gâteau aux bleuets (blueberry cake). Nice but on the mushy side (there's quite a bit of milk) in it. I used a recipe from the tagged Acadian cookbook.

1️⃣ 👆 As a cookbook, it's good. Very representative of my people's foods.
2️⃣ I straighten it out, but no hospital corners or the like. Nope.
3️⃣ 2ºC and rain.
4️⃣ I was talking about râpure in my previous post : oven baked grated potato dish the consistency of snot, stuffed with grilled meat, topped with butter and molasses. Google it, rappie pie in English.

Dilara I know this post is 6 years old, but since you're still around and this cookbook is important to you, can I pick your brains about it? I bought it 3 decades ago and it's been frustrating me ever since 😊. I'm French, and I lack the vocabulary and culture to make full sense of it. None of the Québécois people I've been in contact with have been able to help, so clearly, it's an Acadian book for Acadians... 3d

1. Soda, c'est du bicarbonate de soude alimentaire ?
2. “blé d'Inde lessivé“, c'est du maïs sec nixtamalisé ? Y a-t-il des choses à savoir avant de se lancer dans la préparation ? Un type de maïs particulier ? Dans mon placard, j'ai du maïs sec blanc entier (ça ressemble à des dents et ça sert à des recettes ouest-africaines). Est-ce que ça convient ?

3. J'ai fait des herbes salées dimanche dernier en suivant la recette du livre et en utilisant des ciboules/cives. Plus elles avancent plus elles sont enrobées d'une espèce de mucus. C'est normal ou c'est bon à jeter ?

Start withs some classics : Michel Tremblay, Anne Hébert, Hubert Aquin, Gabrielle Roy, Geneviève Guèvremont, Marie-Claire Blais, Réjean Ducharme, Dany Laferrière, Yann Martel, Arlette Cousture, Yves Beauchemin, Chrystine Brouillette, Kim Thuy, Wajdi Mouawad. They should all have some books in translation. 7y
