The Truffle Underground
The Truffle Underground | Ryan Jacobs
8 posts | 7 read | 10 to read
The Truffle Underground takes readers through the fascinating underworld of the truffle industry. Beneath the glossy veneer of star chefs and crystal-laden tables, a hidden world of intrigue, sabotage, and crime undergirds the elegance of truffles: Feuding factions plant poisoned meatballs in competitors' fields to eliminate rival truffle-hunting dogs. Crime syndicates steal research from the labs of scientists attempting to cultivate them, and unsuspecting foragers are held at gunpoint while bandits lift an entire month's worth of income from their car trunks. The Truffle Underground has all of the makings of the next compulsively readable food expos, a deeply researched dive into the dark origins of the world's most valuable fungus--from the scientific mysteries of their growth to the story of the hapless French farmer who discovered the secret to cultivating them to brutal crimes in the forests and the white-collar crimes that surround this secretive industry. Through it all, a question lingers: What, other than money, draws people to these dirt-covered knobs?

This was a really interesting look into the sordid world of truffle hunting and selling. I knew it was cutthroat but didn‘t realize quite how unregulated it is, or how vicious the competition is (those poor dogs 😢). The day I finished it, I coincidentally had a rather epic dinner that ended with the pictured steak with fresh Italian white truffles shaved tableside. And it was all free - my friend won the night out in a raffle! 🍄

Beneath the gloss of star chefs and crystal-laden tables, the truffle supply chain is full of drama. Who knew that a measly fungus would be responsible for assaults, robberies, frauds, and the murder of dogs??! “The Truffle Underground” is about a world I knew nothing about. And now I am obsessed.

Geeklet I love books like this. There‘s a really good one that‘s similar about the history of phosphorus. I‘ll definitely keep my eye out for this one. 5y

Everyone! I did something SO cool this morning. I got to witness a TRUFFLE HUNT 🍄!! This was our sweet guide and three of his eight dogs 🐕 (each worth 6,000 euros!) and we followed them throughout this protected forest as they found 4 kilos of truffles in about 2 hours! Incredible. Truffles are shaved onto most dishes here in Umbria, and it has been delicious. I have downloaded the tagged book to learn even more now that I have some context!

Crazeedi So you have to read this one too! It's part of a series, but all about truffles!!! 6y
cariashley So awesome, I would LOVE to do this!! 6y
BarbaraBB I looove my truffles, but they are not affordable most of the time. Enjoy your vacation ❤️ 6y

BooksForEmpathy @BarbaraBB Oh I knowww 😤. It is so frustrating (but understandable now that I know more) that here in Umbria a huge truffle is very affordable at around 20 euros only. It is a way of life here, but back in SF, the same size truffle would go for hundreds of dollars. 6y
LeahBergen Very cool! (edited) 6y
BellaBookNook Thanks for sharing. That‘s so cool. 6y
ferskner WOW!!! That is so cool! How did you get hooked up with him? 6y
BooksForEmpathy @ferskner It was very cool! The Airbnb we are staying in is actually part of a hotel here (we didn‘t know this!) and they have a list of fun activities to do that we could sign up for. Truffle hunting was our first choice! 6y
ferskner It would be mine too! It sounds like the experience of lifetime. 6y

If you‘ve been looking for another book along the lines of Tom Mueller‘s exposé on olive oil fraud, Extra Virginity, this is it. Everything about French black & Italian white truffles: the history, science, haute cuisine, luxury cachet, and economics—including thievery, fraud, and the poisoning of dogs. Now I know why that bottle of truffle oil I bought was so awful I threw it away: chemical compounds without any truffle at all. #audiobook

VanChocStrawberry They just mentioned this on All The Books. Sounds fascinating! 6y
Lindy @VanChocStrawberry Yes, fascinating is right. Also, the book I‘m comparing it to: 6y

When I first placed a hold on this, I was pronouncing underground as if it was the location, the the place where a truffle grows. Then I started listening to the audiobook and realized it‘s the criminal kind of underground. Funny how the pronunciation changes with the meaning for this word, isn‘t it?

ErickaS_Flyleafunfurled Ha! I would‘ve thought the same thing you did! 6y
