I love a cookbook that has photos - but only when the photos make sense and match the recipes. For instance - this is decidedly not a sweet potato. Also, I‘ve seen scallions in photos without being included in recipes, and similar problems. I find this very frustrating. And a lot of the make-ahead side dishes are just prepped, not cooked, before being frozen. I don‘t see this saving any time, as I now have to allow for defrosting and THEN cooking.

Clare-Dragonfly I have seen sweet potatoes with whitish flesh, though I can‘t tell from the photo if this is one! Having the recipes mostly be “thaw, then cook” would irritate me, too. 2y
ravenlee @Clare-Dragonfly I‘ve seen light sweet potatoes but never white, and this texture and skin looks exactly like a russet. If you‘re going to shoot a sweet potato, it should be a model sweet potato! 2y

Also made today (for my husband's birthday lunch): vegan (somewhat spicy) corn, black bean & sweet potato burgers from the Make Ahead Vegan cookbook. I fried up half of the burgers for us to eat today & tomorrow for lunches and I froze the rest (following their instructions) to fry up later. I love having the option to make big batches in advance to freeze all or part of for future meals. We definitely need more vegan cookbooks like this one! 👍👍

Suet624 I never buy recipe books because I don't like to cook. But I'm also a vegetarian and get bored with the same old thing. I think you've convinced me now to buy this book. 7y

GlitteryOtters @LauraBeth they are so good! A little too spicy for my husband's taste (they used 4 chiles in adobo sauce for 14 burger patties), but given that we mostly cook separately due to varied tastes plus dietary restrictions, that is fine by me--I'll just make these for me! 😋 7y

Oaxacan Tortilla Soup from the Make Ahead Vegan cookbook (made this while listening to the Where'd You Go, Bernadette audiobook). SO amazingly good! I now have a new go-to tortilla soup recipe. I reduced the salt by half because it called for rather more than was necessary, but otherwise it was excellent. Another good recipe from this vegan cookbook. 😍😋🍵

GlitteryOtters @DebinHawaii it is so good! Also, my past tortilla soup recipes totally suffered from a lack of chile in adobo sauce. This one has it and it is perfect! Now, of course, I have an open can of chiles in adobo sauce, so I *have* to finally try the sweet potato patties recipe in this same cookbook (it will use up the rest of the open can). 😋 7y

GlitteryOtters @LeahBergen seriously, check your library, see if they have this cookbook available. It is a really good recipe (also, the chickpea cauliflower pizza bites in this cookbook are one of my husband's favorite foods, ever). 7y

Part two of today's #booktober post...here are some of my reading snacks for the #readathon tomorrow. In addition to some cauliflower chickpea vegan pizza bites I am about to make (recipe available in the cookbook this is tagged under), I will be snacking on nuts, bananas, Larabars, quinoa chips, Lenny & Larry's vegan birthday cookie, sasparilla soda, rose lemonade & the world's best almond milk (Living Apocathary's cacao rose). #deweysreadathon
