I like this author‘s attitude to canning—that you don‘t need massive amounts of sugar, basically. And she has a more efficient way of dealing with the jars and lids than I‘ve seen before. There are lots of interesting recipes in this book, both basic and more unusual, plus recipes for ways to use those preserved foods, which I appreciate even though almost none of those recipes are relevant to me.

Tamra Yes, the amount of sugar is off putting in so many traditional canning recipes! I especially don‘t like sugar in anything pickled or relishes/salsas. 8mo
SamAnne I love this book! Love the less sugar recipes. Im not a bread and butter pickle fan usually, but love the recipe in this book. 8mo

Yesterday was a day-long advanced screening of November, so I made apricot jam because it tastes like sunshine in a jar.

Recipe is from the tagged book. It's great in that it calls for old-fashioned dried apricots, rather than wildly expensive fresh ones.

I'm quite behind with life in general & #LitsySummerCamp in general, but hopefully I can catch up before bedtime!! This post is for Day 3, Arts & Crafts. I'm not sure canning exactly counts @ImperfectCJ, but it's one of the projects that has been keeping busy & off Litsy this week!! Pictured is our first attempt at peach salsa, which is actually way more delicious than one might think at first 😂 The recipe is from the tagged book, which ⬇

TheAromaofBooks (cont'd) I absolutely love. If you're like me & didn't grow up canning & really have no idea where to start with preserving your own food, this book is an AMAZING resource. Vinton gives step-by-step instructions for all her recipes & for various preservation processes. Thanks to her book, I've successfully canned salsa, pickles, & blackberry jam!! The book is divided by produce type with a handful of recipes for each thing (this salsa was in the ⬇ 3y
TheAromaofBooks (cont'd) peach section) with more detailed instructions on canning, freezing, drying, etc. in the front of the book. This week has been crazy at the orchard - we are having an insane year (in a good way) that has led to way more hours working than I anticipated. We're drowning in blackberries, peaches, & plums, with more on the way!! I'm experimenting with all kinds of recipes trying to get food preserved before it spoils. The joys of summer!! 3y

TheAromaofBooks @Roary47 - I've always been kind of scared of canning, but this book really helped explain some of the “mysteries“ to me & make me feel more confident about trying it. It's super satisfying to see the finished jars!! The author recommends starting with high-acid foods first, so things like pickles & salsas. Now I'm kind of addicted! 😂 3y

My first attempt at canning - strawberry jam! I‘m crossing my fingers it sets. It is a low sugar version (fruitier taste) and I‘ve heard they are looser jams. 🤞🏾 I followed the instructions in the Blue Bible, except I forgot to debubble. 😬

ravenlee I had a batch of strawberry jam that never set (years ago, I‘ve only done it a couple times), and I threw them in the freezer and had lovely waffle toppings for months. I hope yours works, either way! 4y

jewright Did it sheet? I don‘t know if the canning books talk about it, but sheeting is the key. 4y
SamAnne Worse case, you can always use it as syrup! Canning becomes second nature. It is a good audio book activity! 4y

BarbaraTheBibliophage @Tamra Woo hoo!! My parents did a lot of pressure cooker canning (in the 70s) but always kicked me out of the kitchen for safety. I taught myself with that book several years ago. So I‘m proof it can be done—and now so are you! (edited) 4y

This is the part where I‘m glad I don‘t have a hubby because he‘ll say I already have one! The one one the left, I bought it in 2009. I used it constantly where there‘s a torn area from wear and tear from my thumb. Now, on the right, it‘s same thing, just updated version with a gorgeous cover.
