Momofuku Milk Bar
Momofuku Milk Bar | Christina Tosi
11 posts | 10 read | 6 to read
The highly anticipated complement to the New York Times bestselling Momofuku cookbook, Momofuku Milk Bar reveals the recipes for the innovative, addictive cookies, pies, cakes, ice creams, and more from the wildly popular bakery. A runaway success, the Momofuku cookbook suffered from just one criticism among reviewers and fans: where were Christina Tosis fantastic desserts? The compost cookie, a chunky chocolate-chip cookie studded with crunchy salty pretzels and coffee grounds; the crack pie, a sugary-buttery confection as craveable as the name implies; the cereal milk ice cream, made from everyones favorite part of a nutritious breakfastthe milk at the bottom of a bowl of cereal; the easy layer cakes that forgo fancy frosting in favor of unfinished edges that hint at the yumminess inside. Momofuku Milk Bar finally shares the recipes for these now-legendary riffs on childhood flavors and down-home classicsall essentially derived from ten mother recipesalong with the compelling narrative of the unlikely beginnings of this quirky bakerys success. It all started one day when Momofuku founder David Chang asked Christina to make a dessert for dinner that night. Just like that, the pastry program at Momofuku began, and Christinas playful desserts helped the restaurants earn praise from the New York Times and the Michelin Guide and led to the opening of Milk Bar, which now draws fans from around the country and the world. With all the recipes for the bakerys most beloved dessertsalong with ones for savory baked goods that take a page from Changs Asian-flavored cuisine, such as Kimchi Croissants with Blue Cheeseand 100 color photographs, Momofuku Milk Bar makes baking irresistible off-beat treats at home both foolproof and fun. From the Hardcover edition.

Bailedbailed

I picked this up because of an essay by Christina Tosi in a collection of food writing. I enjoyed Tosi‘s salty writing style in this cookbook too, but few of the recipes even tempt me. Cereal Milk, for example, is apparently popular at her bakery—but I‘ve never liked the taste of milk that‘s had cereal in it. (I‘ve never liked cold cereal either.) I don‘t mind recipes like these that require sub-recipe ingredients, if the end result seems worthy.

TrishB I hate cereal and milk, the two of them together 🤢 5y

Cathythoughts Love lots of salt 🧂👍🏻 5y
KarenUK Not a huge milk fan either, but the crack pie recipe is amazing though.... 5y
Fridameetslucy I live near by to milk bar - make yourself some crack pie !!! You won‘t be sorry 5y
Lindy @KarenUK I noticed you had raved about the crack pie in an earlier post. @Fridameetslucy votes for it too (and straight from the source!). It looks like an eggy (4 in one pie) butter tart or sugar pie to me. I‘m sensitive to eggs so I will stick to a Canadian version that calls for just one egg yolk. I might try the oatmeal cookie crust, however. 5y
8little_paws I've made the crack pie a bunch, it's great. The rest of milk bar stuff, meh 5y
Lindy @8little_paws Another vote for Crack Pie. Well-named, it seems. 😁 5y
ReadingEnvy I gave her first cookbook a bad review because they didn't bother to adapt it to personal kitchens at all. I mean give me a break I'm not going to make a layer cake by baking a sheet cake and cutting circles out. At some point I did make the crack pie when I looked up recipes to use up egg yolks and it was okay but a bit over fiddly. 5y

I am in love with the idea of the flavour I think milk should have—and these milk crumbs were the first perfect embodiment of that idealized milk flavour. They have a richness, butteriness and sweetness (from enrobing with white chocolate) that makes any hater want to love the flavour of milk. … Our milk crumbs go in cookies, cakes and pie crusts, and that‘s just the beginning.

Mitch We once had ‘cereal milk‘ flavoured ice cream and it was sooooo nice! 5y
Christine Looking forward to seeing if you make more recipes from this, especially since I feel like revisiting Tosi after just reading the piece about her in 5y
Lindy @Christine No, sorry. Just the chocolate cookies. I like her writing style too, so I‘m going to give her cake book a try. 5y

Lindy @Mitch I guess I should try it, even though the whole idea of cereal milk doesn‘t appeal to me. Mads Refslund steeps toasted bran in cream for ice cream in 5y
Mitch @Lindy interesting 5y
KarenUK @Lindy @mitch My mum used to make brown bread ice cream from a local Sussex cookbook written by monks! It was delicious 😋 (edited) 5y
Christine I‘ll stay tuned! :) 5y
Lindy @KarenUK David Leibovitz has a version of brown bread ice cream too. I will let you know if I try making it. Right now I‘ve got 4 different homemade ice creams in the freezer: spruce tip; chicory & vanilla with chocolate; smoked hickory, black pepper & oregano with chocolate; and peach. 5y
Lindy @Christine Littens are twisting my arm. I may be making Milk Bar-inspired items soon, if not following her actual recipes. 5y
Christine Haha! Love it. 5y

The Chocolate-Chocolate Cookies from this book are huge. Directions say to use 1/3 cup batter for each cookie, chill for at least an hour, then allow 4 inches between each cookie on the baking sheet. Which I did. I‘m cutting the next ones into 4 pieces before baking.

DivineDiana They certainly are huge! 😀 5y
VioletBramble I‘ve never been to Momofuku Milk Bar. Are the cookies that big when you buy them there? 5y
Lindy @VioletBramble Good question. I assume so. The cookbook illustration shows them stacked like pancakes on a plate which I took to be about bread plate size. I now realize they are probably sitting in a dinner plate. 5y

Lindy @DivineDiana Yep! They taste good, but one is too much for me at one time. 5y
AlaMich I made her Birthday Cake. It was awesome, but labor-intensive doesn‘t begin to describe that recipe! 😅 5y
Lindy @AlaMich I know what you mean. I went through the cookie ingredients ahead of time, but missed the last thing because it was below a bar. The last ingredient was a half batch of chocolate crumbs (to have baked prior to starting the cookies). I substituted crumbled vanilla wafers instead. 5y
Cathythoughts Look delish 5y
Lindy @Cathythoughts Thanks! They are. 😊 5y

Filled with lots of fun and quirky recipes that fill you with childhood nostalgia and satisfies your sweet tooth. These desserts are something that the kids will devour but are sophisticated enough to serve to company. This is definitely a must have for me!

#rocktober #comfortablynumb Ok... so my mind went in this direction! Numb = drugs = crack!
After tasting Crack pie for the first time this weekend, I immediately added this cookbook from the fabulous NYC bakery to my Xmas wish list.... I must have that recipe! And cereal milk ice cream sounds amazing too! 😋
Thanks for another fun month of challenges ladies! 👍💕

Cinfhen Oh wow!!! I'm adding this one too #stacked 6y
emilyhaldi Oh my gosh everything from Milk Bar is amazing!! @Mdargusch is a huge fan of the birthday cake truffles. Crack pie is insane. And my husband has a weakness for the cookies so we have about a dozen at our house right now for his birthday.... dangerous!! 6y
Mdargusch Those cookies and truffles 🤤 6y

KarenUK @emilyhaldi @Mdargusch That all sounds amazing! Now I may have to buy that book today so I can start baking! It‘s too long a wait until my NYC trip in March to see Hamilton... 😊 6y
AlaMich I have now made the Birthday Cake twice. It's awesome, but the best part is honestly the birthday crumb. I could eat that by the handful. 6y
TricksyTails 😂 I need me some Crack Pie!! 6y

Momofuku Milk Bar Compost Cookies. There used to be a lot more on the plate. Oddly enough, the recipe does not call for
compost. 🤔 But yummy!!!! 😋😋😋

TheBookStacker Vegas?! 7y
AlaMich @TheBookStacker No...I made them from a recipe of Christina Tosi, who runs Milk Bar. It's a bakery with several locations, but it is part of the Momofuku family of restaurants. 7y
AlaMich @TheBookStacker oh wait, I just saw that there is a Milk Bar in Vegas; I thought there was just a restaurant. In any case, I'm in Chicago...no Milk Bar here, sadly. 7y

LauraJ Aww, no crack pie for you. But those cookies look amazing! 7y
AlaMich @LauraJ I had never heard of this crack pie of which you speak til I just looked it up...maybe that's next! But these are plenty crack-y, trust me!! 😋 7y
LauraJ @AlaMich If it ever gets cool enough to bake, I'll have to try a batch of these. 7y
AlaMich @LauraJ I may be crazy, but I'm seriously considering baking the Milk Bar birthday cake with all the sprinkles for my birthday at the end of the month. Yeah, definitely crazy 😜 7y
LauraJ @AlaMich since it's your birthday, you deserve the cake you want! 7y

First you #crush things - cornflakes, ritz crackers, cinnamon toast, graham crackers (what is a graham cracker??). Then mix with milk powder, sugar & butter, and bake. Then use your crunchy crushed stuff as the basis for incredibly complicated-but-delicious-looking sweet recipes.

I think I need a trip to New York to fully appreciate what they're doing in this book! (Or maybe someone to cook them for me?) Much crushing tho!

#AugustGrrrl @Cinfhen

celtichik I think there is one in vegas now as well :) At one time you could order Christina's birthday cake online :D 7y
rockpools @celtichik Their celebrations cakes 🎂 look amazing - and I hadn't realised they had branches in other cities... But I'm in the UK, so it'll be a lot of saving up before I can sample any of them properly! 7y
julesG Graham crackers are the elusive ingredient for us non-US people. They are hard to get here in Germany, nearly as hard as proper clotted cream and cheddar. 😉 7y
See All 9 Comments
Aseleener I thought graham crackers were called "digestive biscuits" or something similar in the UK. I always thought it sounds so unappetizing! 7y
ReadingEnvy I've made her crack pie and compost cookies. My big complaint about this cookbook is that while beautiful, they haven't done enough to make it accessible to the home cook. Some of the ingredients are so ridiculous to find that you might as well just go there ... although in the USA you can buy Graham crackers at the grocery store and order their baked goods from Goldbely. 7y
Cinfhen Yummmmmmm😋 7y
rockpools @julesG I'd wondered where you were based when I saw your Danish comment earlier! I would offer to send you clotted cream supplies (we have plenty!!) but I think the post office/customs might object... 😋 7y
rockpools @Aseleener Thank you - that makes sense. We use digestives to make cheesecake base, so I guess that'd work in these. And as for the good old Victorian name 😂😂. Why make anything sound appetising when you can make it sound functional/medicinal?? 7y
rockpools @ReadingEnvy Sadly, I agree with you. It's easily the scariest cookbook I own (and I'm scared of most of them)! I should really attempt something from it one day... but... 7y

I had to post another one for #cookbooklove. I LOVE pie. It makes me happy. Instead of birthday cake, I get birthday pie. And believe me, Christina Tosi has created a pie that is called crack pie for a reason. The recipes in this book are time consuming & sometimes complicated (so as the mother of 2 toddlers, it's been 6 yrs since I've had it). But this one recipe makes the whole book worth it.

BooksForEmpathy OMG. Crack pie is so freakin amazing and delicious!! I have wanted to make the recipe for SO long, but it just takes so long! 7y

andreadmw Ok I have to try this. 7y
angrylilasian @BooksForEmpathy Yes! But it is time consuming so I haven't since I had kids. 😆 I'm planning on going to NYC next year so I might just wait and go buy some. 7y
angrylilasian @8little_paws Your friends and family are so lucky!! 😄 7y
angrylilasian @andreadmw you really do! It's so good. I really want some now... 7y
