6 posts | 1 read | 4 to read
Preserving is an ancient technique which speaks to a modern sensibility. It puts you in step with the seasons, you can use up leftovers, and it helps you rediscover a timeless kitchen craftsmanship e" all aspirations of the thoughtful modern cook. The Modern Preserver takes you through every aspect of preserving: from classic chutneys and jams, through pickles and fermentation, to cordials and compotes. It weds age-old methods with a very contemporary feel. There are fresh flavour pairings like Raspberry and Rose Jam, and Carrot and Citrus Chutney. There are ideas from across the world like Kimchi and Japanese Pickled Ginger. And there are more than 130 creative and unique recipes, be it for Strawberry and Lavender Gin or Roasted Red Pepper Ketchup. Kylee Newton is a passionate self-taught preserver with stalls at Londone(tm)s Broadway, Maltby Street and Peckham markets under the name Newton & Pott. Here she includes both simple recipes and immersive projects, and her recipes make stylish gifts and reassuringly natural homemade treats.

I love making pickle and chutney - but jam has always been a mystery! Hopefully, when this cools it will be blackberry jam - rather than runny blackberry sauce! 🤣

CoffeeAndABook Looks delicious 😋 I‘m planning to make my first ever blackberry jam today 🙌🏼 I‘ve already picked tons of berries in the rain today and will cook them later on. I can‘t wait!! Hope yours turned out just as you‘d hoped 😄 2y
Mitch @CoffeeAndABook good luck! 🤣👍🏼🤣 2y
SamAnne Ooh… I will need to check out that book. I‘m about to do a canning marathon: apricot jam, apricot rum sauce, and sour cherry preserves. Life got in the way of my usual canning these past 2-3 years. Looking forward to stocking my shelves again. (edited) 2y

julesG Looks yummy! Jam doesn't faze me. I made red currant jam/jelly last week. I'm not very good at pickles. - - - by the way, how did your kimchi turn out? 2y
AlaMich They make jam look so easy on GBBO. They just whip some up in the middle of doing ten other things, like it‘s nothing. 2y
Amandajoy I‘m intrigued… 2y
Mitch @AlaMich I know right! Doesn‘t happen like that in my kitchen! 🤣 2y
Mitch @SamAnne ohhhh - sour cherries sounds yum! 2y
Mitch @julesG really good - and it goes with everything! 2y

So - my first ever batch of Kimchi in the jar. Got to wait now for the fermenting process to begin before we get to taste! If nothing else it looks kinda right!

erzascarletbookgasm I‘ve never heard of milk kefir @Cathythoughts Is it like cultured milk for kids? 5y
Cathythoughts @erzascarletbookgasm it is cultured milk for everyone.. I use it in vegetable smoothies or even on its own ... I don‘t know how to share a link on Litsy , but this is the one I found most helpful : https://Youtu.be/xIZrlm9tsrw she makes it very simple. 👍🏻 5y
Cathythoughts @erzascarletbookgasm I can email you the link if your interested.... 😘 5y
Blaire I love kimchi. Had it on a vegan sausage with it the other day. So good! (edited) 5y

First attempt at sauerkraut!

PickingBooks I‘ve always wanted to do this! I also want a sourdough starter. I‘m always too afraid I‘ll do it wrong though. Let me know how it goes! 5y
Mitch @PickingBooks will do! I‘ve got a sourdough starter in my fridge that I may have forgotten to feed for several months! I‘m frightened to tell me friend I may have broken the chain for this starter spreading across time and continents! Too much responsibility! 🤣 5y
Prairiegirl_reading I tried to can tomatoes once but couldn‘t bring myself to open the jars for fear of killing someone in case I did it wrong! 😱 5y

I have always imagined that I wanted to be the type of person who gave gifts of homemade jam made from the fruits of my backyard garden, so I bought this book to help me imagine better. (Have I mentioned my black thumb and aversion to cooking before?) #BonApetit #AugustGrrrl

@Cinfhen I bought this at the same time as Plenty, Plenty More and Jerusalem. 😄

Debiw781 😂😂 I keep saying I will learn to do this too 7y
