Cook Brazilian
Cook Brazilian: 100 Classic and Creative Recipes | Leticia Moreinos Schwartz
4 posts | 1 to read
Like its soccer and samba, beautiful beaches and carnival, Brazilian cooking is an explosion of colour and flavour. Leticia Moreinos Schwartz spending her childhood in Rio's iconic neighbourhood Ipanema grew up eating Caldinho de Feijao all day and drinking fresh coconut water on the beach. When she moved to New York she found she was homesick for the colour and vibrancy of the food she grew up with. Cooking for herself, she went back to the Brigadeiros and Baba de Moca of her childhood but found that her palate had changed. Leticia reconstructed classic Brazilian dishes, using the skills she had gained whilst working in some of the world's best kitchens. The dishes are a little lighter and less sweet to fit with modern health-conscious lifestyles, and are easier to recreate at home. The result is this groundbreaking collection of easy-to-make, easy-to-love recipes. With simple techniques and clear directions, dishes like Salmon no Risotto de Caipirinha (Salmon over a Caipirinha Risotto) and Bolinho Quente de Doce de Leite com Sorbet de Coalhada (Molten Dulce de Leche Cake with a Sour Cream Sorbet) will become part of your everyday cooking repertoire and bring a welcome Copocabana-born breeze into every home kitchen.

Since January is cold and there is no indoor dining, I ordered delivery from the second Brazilian restaurant that is vaguely within walking distance. The seafood moqueca was delicious. I was expecting the farofa be a side dish, but this variation was basically powder. So I added it to the soup for a thicker broth. 🤷

I indulged and ordered a caipirinha AND my newly beloved Guarana soda. 😁

I made a #Brazil vegan feijoada that I found on instagram (and translated with Google). My favorite ingredient is “green smell“ which apparently is equal parts chives or green onions and parsley. 😄

Liz_M @Chrissyreadit It also looks very different than the instagram too! 😆 I made the tofu cubes as small as the black beans, but was to lazy to cut the carrots small, so you can't see the tofu or mushrooms at all! The recipe was a little informal about seasonings, so it was bland at first. I added a lot of salt and pepper and then a little creole seasoning to give a hint of kick. 4y
Liz_M @BookishMarginalia Nope, it smells like “liquid smoke“ 🤓 4y
Butterfinger I'm so impressed with the cooking. I hope you enjoyed it. 4y

Easy to follow recipes and beautiful pictures. I made Broccoli and Minas cheese soufflé/Suflê de Brócolis e Queijo Minas and it was delicious, although I had to use the different kind of cheese. #FoodAndLit #Brazil
