Franklin Barbecue: A Meat-Smoking Manifesto | Aaron Franklin, Jordan Mackay
7 posts | 4 read | 4 to read
A New York Times best selling complete meat- and brisket-cooking education from the country's most celebrated pitmaster and owner of the wildly popular Austin restaurant Franklin Barbecue. When Aaron Franklin and his wife, Stacy, opened up a small barbecue trailer on the side of an Austin, Texas, interstate in 2009, they had no idea what theyd gotten themselves into. Today, Franklin Barbecue has grown into the most popular, critically lauded, and obsessed-over barbecue joint in the country (if not the world)and Franklin is the winner of every major barbecue award there is. In this much-anticipated debut, Franklin and coauthor Jordan Mackay unlock the secrets behind truly great barbecue, and share years worth of hard-won knowledge. Franklin Barbecue is a definitive resource for the backyard pitmaster, with chapters dedicated to building or customizing your own smoker; finding and curing the right wood; creating and tending perfect fires; sourcing top-quality meat; and of course, cooking mind-blowing, ridiculously delicious barbecue, better than you ever thought possible. From the Hardcover edition.

Books really do change lives! A friend gave my husband the tagged book for his birthday a few years back.... he loved the book. So of course he then has been on a 3 year mission that has included travelling nearly 5,000 miles to eat at the restaurant, buying a back yard smoker, having a brisket 1:1 14hr lesson in Texas and today - staying up all night to smoke a brisket at home for dinner today! All because a friend bought him a book !

JaclynW Wow! Awesome story! 4y
Mrs_B And it looks soooo good! 4y
squirrelbrain Staying up all night?! Wow, that *is* commitment! 4y

Mitch @squirrelbrain He fired up the smoker at 11pm last night - brisket went on about 1am...... and we ate at 4pm this afternoon! Bless him, he sat all night tending the fire! Early bight tonight! 4y
Mitch @JaclynW And it all started with a book! 4y
Mitch @Mrs_B It was amazing - texture like soft butter - wonderful with pickled watermelon! 4y
Soubhiville Yay! Pickled watermelon sounds interesting. Does it keep some of the watermelon flavor? What about texture? 4y
Mitch @Soubhiville Its really delicious - my new favourite pickle.... it's a bit like a light apple texture - it keeps its form ( I thought it would go mushy) and its got a slight fruity taste - there is star anise, lemongrass and ginger in the pickling liquid too. 4y
Soubhiville Ooo, that sounds really good! 4y
MicheleinPhilly Holy moly. I‘m coming to your house as soon as this travel ban lifts. 🤤 4y
Mitch @MicheleinPhilly come on over! 4y

#bfc Goals are on hold for a week whilst we eat our way around Austin / Dallas! This was breakfast ( this BBQ place, no 1 in Texas, only opens on Saturday 8am until sold out! We arrived to join the queue at 6:45!) But we did go for a nice walk around a few small towns - wandering and browsing - perfect Saturday! #bfc

Mr K was given this book about 3 years ago - it‘s literally changed his life! As a result of this book he bought a backyard smoker, has spent many summer weekends smoking brisket, ribs, turkey and pork shoulder and today his dream came true - after a 4.5 hr wait in line he got to eat at the restaurant of the man himself.

MicheleinPhilly YUM! Congrats Mr. K! 4.5 hours is a serious commitment to BBQ. Hats off. 5y

I‘m married to a non reader (I know - weird, right!). But I bought him a BBQ book for Christmas as he‘d just finished watching a few seasons of Pitmaster Championships and he does love BBQ. Anyway- he confessed today he‘d done a little online shopping in the week and a parcel was arriving today. Within minutes, delivery driver knocks on door! I now have an 85 kg off set smoker in the lounge! #boysandgadgets #inspiredbybooks

julesG As long as you don't use it indoors. 7y

Mitch Don‘t worry @julesG it‘s making it way to the back garden as we speak! 7y
JacqMac My hubby is in serious want of a smoker. 7y
Mitch Hi @AmyG and @JacqMac he‘s just finished putting it together and it‘s huge! More akin to a stream train than a smoker! Looks like it‘ll feed the whole block! 7y
JacqMac @Mitch 😂😂 7y
CherryPie Nice! I want one, too. 😀 7y
kezzlou85 I'm married to a non reader too. 7y
Mitch At least there‘s never any arguments over shelf space😂😂 @kezzlou85 7y

Pickpick

Even a lowly gas grill can be turned into an excellent smoker with the right wood chips (hickory) and the right cut of meat (St. Louis ribs) seasoned simply with fresh cracked salt and pepper, cooked low and slow all afternoon, brushed at the end with a good BBQ sauce, wrapped in foil, and left on the grill for one final, totally worth it, mouth-watering, fall-off-the-bone hour. #litsycooks

I think these are the only two coffee table books we have. My husband considers barbecue to be his religion and these were gifts from his parents. I love to eat barbecue, which I think was a factor in him marrying me. 😂 #FunFridayPhoto

Laura317 I understand. My husband's the same way with University if TN football. 🏈 8y
WanderingBookaneer That book is Smoking for Nerds. I loved it. Wish I had the skills to follow his instructions and build one for our house. 8y
MMenefee When I visited Austin this past spring, I got up early to get a place in line at Franklin Barbecue. Waited like 3 hrs, with a book (natch). It was worth it. 8y
Bookzombie @Laura317 Thanks for getting it! 😀 @WanderingBookaneer My husband uses a pit that he got a Home Depot several years ago and he makes some awesome barbecue. @MMenefee My husband had Franklin's when he was still in the trailer and said it was delicious. I have not yet tried it myself. 8y
