Bread Illustrated: A Step-By-Step Guide to Achieving Bakery-Quality Results at Home | America's Test Kitchen (Firm)
11 posts | 1 read | 5 to read
In this comprehensive cookbook, America's Test Kitchen breaks down the often intimidating art and science of bread baking, making it easy for anyone to create foolproof, bakery-quality breads at home. Many home cooks find bread baking rewarding but intimidating. In Bread Illustrated, America's Test Kitchen shows bakers of all levels how to make foolproof breads, rolls, flatbreads, and more at home. Each master recipe is presented as a hands-on and reassuring tutorial illustrated with six to 16 full-color step-by-step photos. Organized by level of difficulty to make bread baking less daunting, the book progresses from the simplest recipes for the novice baker to artisan-style loaves, breads that use starters, and more complex project recipes. The recipes cover a wide and exciting range of breads from basics and classics like Easy Sandwich Bread and Fluffy Dinner Rolls to interesting breads from around the world including Lahmacun, Panettone, and Fig and Fennel Bread.

I need this book. My bread is always a little wonky.

Ruthiella My bread is from the grocery store. 🙃Yours looks delicious 😋! 3y
Prairiegirl_reading Can‘t really go wrong with ATK. I got a recipe from them for pecan pie that is to die for! Your bread looks delicious!!! 3y
JamieArc My spouse and I have a hard time peeling our eyes away when America‘s Test Kitchen is on TV. I really need to actually try some of their recipes! 3y
Tamra Yum! 😛 3y
intothehallofbooks I have this book! And I love it so much! I agree with @Prairiegirl_reading about ATK. (My other favorite of theirs is The Chicken Bible which I use all the time.) 3y

Today I made this Quick Cheese Bread from the tagged cookbook with plans to serve it with dinner tonight 🍞🧀 but I doubt it will last that long with three teenagers in the house! I didn‘t even get a pretty picture of it with a nice, clean counter before we sliced it and “tested” it. I wish you all could smell it thru this picture, so good!

I love this cookbook!! Great recipes for rolls, breakfast breads, pizza crusts, and regular loaf breads.

Bookish_B That looks yummy! 🤤 4y

VERY VERY VERY excited about the new cookbook I bought today!!! I‘ve been looking for a “baking” book that was ONLY bread-making for ages.

If any of you know any other bread-making cookbooks, please feel free to recommend them to me!

🍞🥖

Lcsmcat The Blessings of Bread by Adrian Bailey is one I‘ve had for a long time. Copyright is 1975 so I‘m not sure if it‘s still in print. My other three are written for bread machines, but the recipes can be done by hand so if you‘re interested I‘ll tag them. 6y
intothehallofbooks @Bookwormjillk @Lcsmcat Thank y‘all so much for these recommendations!!! I‘m going to look for them!! 6y

I baked an olive loaf last week, but hubby got to it before I could get a good photo. ? He could rival Oprah: "I loooove bread!"
Yesterday I made the pain de campagne. While my crumb was more "regular" than it should have been, the bread was delicious!

Thank you again @aschermetz ! This cookbook is going to be well used!

(The green pate is actually a homemade vegan pistachio nut cheese which worked very well with this bread!)

Bookish_AF America‘s Test Kitchen books are the BEST! 6y
SandyW @nestlera Agreed. I had this on hold from the library to test-drive before buying, but thought really why? And so I went ahead and got it anyway. 6y
aschermetz Yay so glad!! Looks amazing! 6y
SandyW @aschermetz it was yummy, although the olive loaf was amazing! 6y

Last week, the wonderful Amy @aschermetz had her husband pick a name from all the entrants in her #aschermetz10kgiveaway - and I won, $25 @ Amazon. Surprise! 😀

I picked up the tagged book, and rounded out the order with these cool elastic shoelaces. Now I never have to tie my sneakers again! And I'm making the olive loaf for dinner tonight. THANK YOU AMY! 💐 I'm so happy I found this wonderful, supportive, generous, and caring community.

Kaye Congrats ! 6y
TricksyTails Congratulations! 🎉 📚 6y

Richryan52 @Sandyw you have to watch the tv show after you read the books. Ian Glen is perfect casting 6y
aschermetz Yay!! What a great book! 🎉🎉 6y
SandyW @Richryan52 Thanks for the recommendation. 6y
SandyW @aschermetz Tried the olive loaf recipe, yum. All those purple flags in the photo (of which you only see a fraction) are my husband's wish list! And the silicone laces are wonderful. My laces always come undone. 6y

I've successfully baked bread several times a week my whole adult life, but there's always more to learn. I'm an ATK fan and can't wait to read this.
