Adapted from historical texts and rare African-American cookbooks, the 125 recipes of Jubilee paint a rich, varied picture of the true history of African-American cooking: a cuisine far beyond soul food. NAMED ONE OF FALL'S BEST COOKBOOKS BY THE NEW YORK TIMES Toni Tipton-Martin, the first African-American food editor of a daily American newspaper, is the author of the James Beard Award-winning The Jemima Code, a history of African-American cooking found in--and between--the lines of three centuries' worth of African-American cookbooks. Tipton-Martin builds on that research in Jubilee, adapting recipes from those historic texts for the modern kitchen. What we find is a world of African-American cuisine--made by enslaved master chefs, free caterers, and black entrepreneurs and culinary stars--that goes far beyond soul food. It's a cuisine that was developed in the homes of the elite and middle class; that takes inspiration from around the globe; that is a diverse, varied style of cooking that has created much of what we know of as American cuisine.

#Mtcookbook Meatballs & BBQ sauce compliments of Tipton- Martin. 😋

I don‘t generally like commercial sauce because it sooooo sweet. The beauty of homemade is I can tone the sugar down.

I wouldn‘t be surprised if this cookbook turns out to be my favorite this year. I have several pages tabbed.

#Mtcookbook Hubby chose chili & cornbread for his Bday dinner. Trying out this skillet cornbread from Jubilee, which is a remarkably beautiful & informative book.

“Asking a Southern cook whether sugar belongs in cornbread is like pouring gasoline on a smoldering fire.” 😳 Who knew?

Must be akin to the debate over beans in chili. I‘m most definitely in the bean camp - in fact I prefer all beans!

Tamra @mcctrish according to Toni, the sweet version is “skillet bread”. I don‘t prefer sweet either, but I am catering to my husband. 😉 3mo
mcctrish Who knew?! I usually make my cornbread in a skillet (without sugar) so I‘m probably making the entire south mad as hornets 🤣 3mo

Deblovestoread @mctrish. You are good to go…my southern grandmother probably made cornbread almost every other day of her life as a wife and mother. Always in a cast iron skillet, no sugar. 3mo

These two are “helping” me pick out a shrimp & grits recipe. I have several to choose from - it appears to be one of those dishes each cook/family has a variation on. 😋

We‘re going to pair it tonight with one of our favorite movies, My Cousin Vinny. Joe Pesci: “What is a grit anyways?” 🤣🤣

I absolutely love cookbooks and this was a good one. Loved the variety and the little tidbits about where the recipes came from. Renewed the library copy a couple times before splurging on my own copy. Know I‘ll use this one a lot.

Hey #pennyperpage peeps! Making sure I‘m not cheating here. This week I bought a cookbook (which I‘m not counting cookbooks, they‘re different), and then got two of the other books and part of the third with B&N gift cards. Then I told my husband I get one book for every $200 he spends I get a book, so that should count for the rest of the third book. Right? I‘m all even with this order? (I‘m trying to be good.)

Toni Tipton-Martin is kicking off the culinary track of the Decatur Book Festival this evening (6:30 pm EDT) she is hosting a series of talks with African-American chefs (and one mixologist) during the month. I loved her earlier book The Jemima Code. This cookbook expands upon that book and modernizes historical recipes.

A very wonderful box of loveliness. The books are amazing - Ive really been coveting this cookbook & it looks AHMaaaaZING... I cant wait to dig in & start experimenting with new flavours. I decided to spend gift cards on cookbooks. In order for me to purchase, they have to meet a sticky tab threshold - I found myself tagging every other recipe in the books I checked out from the library. 😋

A cookbook of American southern foods. Some good basics (I am going to try the biscuits) and some things that sounded interesting but I don‘t want to eat at all. Overall good pictures.

💫💫💫💫💫 This cookbook was obviously a labor of love. Highly informative and mouthwatering! I thought it was going to be a coffee table picture book, but no, there are many accessible recipes that I really want to try. Like the above, Chile-Pecan sauce for roast poultry (or anything else for that matter). I would rather not have the drink & dessert sections, but that isn‘t a criticism. Definitely not suitable for vegetarian cooking.
