The photo doesn't do the stew justice, but it was SO GOOD. I couldn't find fresh habañeros*, so I used a jalapeño and a few dashes of habañero hot sauce. Caribbean-Style Swiss Chard and Butternut Squash Stew from the tagged.
*About 20 years ago, I had a habañero plant in a container on the balcony of our apartment in North Carolina. It grew to about three feet tall and produced at least a hundred habañeros. And now I can't find one pepper. *sigh*

Last night I made Ottolenghi‘s Crushed Lentils. Ful Medames is one of our favorite dishes and this one is basically a creamy version. 😋
Not including a photo of my bowl because it is not appealing at all! 😜 Hard to make mushy legumes attractive.

Fall Harvest Butter is pretty tasty. Husband liking his toast as well, which is great. Another option for sneaking good food into his gut😂
It‘s not as thick as I‘d like, but I didn‘t want to turn the slow cooker to high with the propped open lid to let more moisture evaporate.
Lesson Learned: Start prepping this one earlier in the morning so I have options to keep cooking without staying up too late. Problems when you‘re over 50🤣
Excited to try this Fall Harvest Fruit Butter! I tried making a different vegan butter recipe and was not impressed with the too liquidy consistency, but Hester‘s slow cooker direction to prop the lid of the slow cooker open makes total sense for a more successful result. Only downside is that I‘m not a fan of peeling apples and pears, but if this stuff is yummy, I won‘t complain again about it.
Baked tofu with peach habenero barbecue sauce. A friend made some and sent me the bbq sauce recipe, but I went back to the big book of tofu because I needed to figure out the best way to cook it. I usually airfry cubes, but wanted a bigger slice. Pretty good, and I will be making the sauce again for sure.
