Took myself out for brunch (vanilla latte and egg and cheese on a cheddar chive biscuit) along with my cookbook to plan what I‘m making my mom for Mother‘s Day.
My sister and mom are over for Christmas 🎄 I made us fried eggs and hash browns, plus we had some cinnamon bobka and wassail from Trader Joe‘s. We also watched some home movies 🎥
Dealing with a bit of a Crohn‘s flare, so I stayed home for Thanksgiving. Still felt the need to cook, so made a rice pilaf to have along with the pumpkin pie my mom made and left for me earlier. A cup of ginger turmeric tea to round it off.
Otherwise just enjoying a laid back day of sleeping in, watching the dog show, listening to an audiobook, and snuggling with my cat.

I am obsessed with America‘s Test Kitchen. I love most of their cookbooks and ALLLL of their YouTube videos. Seriously, when I‘m stressed, I read/watch ATK.
I‘m trying very hard to cook smaller amounts with my twins away at college and my son away from home most nights. It‘s so hard, you guys. But I‘m trying.
Tonight I made weeknight beef stew for two. It‘s delicious and easy!! One small gripe: I wish there were pictures for every recipe.

Low key Christmas Eve dinner - Mac and cheese, roasted cauliflower with lemon and capers, a soft bakery roll, and sparkling grape juice in a Christmas glass. My mom got some lemon cookies and made some peanut butter and chocolate candies (my favorite!)

Watermelon and Feta Salad with Mint
“Trim and discard rind from 12 ounces thinly sliced watermelon. Arrange watermelon on plate and sprinkle with 1/2 cup crumbled feta cheese and 1 1/2 tablespoons chopped fresh mint. Serve.”
