A Bakewell tart from the tagged cookbook. Any aficionados on Litsy? If you‘re not familiar, there‘s a short crust pastry bottom, then a layer of jam, then almond sponge cake topped with sliced almonds. I will get my English neighbours‘ opinion on it tomorrow when I take some over there.

I‘m still going strong with the tagged cookbook. Carrot Muffins. Too sweet! I cut the amount of sugar called for, but should have reduced it further.

quietlycuriouskate It's tricky, isn't it, because of the baking chemistry, but I often find cake recipes that look scrumptious are just too sweet for my taste these days. 2y

The Everything Cake, citrus variation, from the tagged cookbook. I used pink caracara oranges, Grand Marnier for flavour, beet powder to up the pink colour, reduced the eggs from 3 to 1, doubled the milk and doubled the baking powder (to make up for the missing eggs). Dorie Greenspan encourages us to play around with her recipes.

Sour Cherry Spice Squares from the tagged cookbook. (I substituted the last of the frozen sour cherries from my garden for the frozen cranberries in the recipe. I also skipped the layer of cream cheese frosting.) Greenspan writes: “They look sweet, plain and old-fashioned, but their flavour turns out bright, sassy and tough to pin down.” Yes, I agree. 👍

Raspberry-Lavender Muffins from the tagged cookbook.

Anna40 Ah lavender in baked goods is wonderful. I wish I could eat one of those muffins 🥰 2y
Lindy @Anna40 The recipe calls for steeping the lavender in melted butter, then straining out the flowers. Instead, I ground up the lavender and mixed it right in. I substituted some rye flour for part of the white flour to disguise the bits of lavender. Tastes great! 2y

Anna40 Sounds wonderful. I ate lavender in cake in an Arabic bakery for the first time. They used the lavender in the lemon glaze on top of the cake so not in the batter. It had a light almost faint lavender scent that made it 😋 2y

Greenspan offers fresh takes on some familiar recipes, as well as plenty of new and creative baking ideas. I‘ve stopped using Pinterest and food blogs for recipes because they invariably suck, so books like this ar every welcome in my kitchen.
