Today‘s soup, vegan Creamy Cauliflower Soup with Mushroom & Hazelnut Topping from Ellie Krieger is really good—the topping with it‘s hit of sherry vinegar makes the soup. Started my new (re-read) of an audiobook this morning (for #pop19) whilst #audiosouping

Tried a recipe from November‘s Oprah magazine... we may not get fall weather in SoFlo but I still had a craving for fall flavors!🍁
Roasted cauliflower & butternut squash soup with cinnamon and cumin...🥣
It was supposed to have Halloumi croutons, but I couldn‘t find any at the store, so added my own Florida twist of avocado and Sriacha! 🥑🌶

Today‘s #soupersundays concoction is Creamy Red Lentil Soup, my mashup of two Madhur Jaffrey recipes. It‘s aromatic, tasty, creamy from purred lentil & potatoes and vegan. Link to recipe post below.

Trying to find my fall vibe with this soup & a spooky book (bought on major discount & with a gift card on Amazon, so like free 🤗) but my humid weather here just won‘t cooperate.😬 I‘m only about 30 pages in so far & I‘m intrigued.

A current read for a book tour review this week with today‘s finished soup-my lunch & #soupersundays blog post. This is (Not) Chicken Enchilada Soup from Eating Well, subbing in jackfruit for the chicken to make it meat free. It‘s really good, as is the book so far. I had not heard of women in the ‘40s & ‘50s taking the “Reno cure”-staying in Reno, Nevada for 6 weeks to get a fast divorce. I like historical fiction that teaches me something.🤓

I forgot to take my usual finished soup + a book photo so I had to improvise. I didn‘t get to finish this library book when I checked it out before so I am hoping this time I can. The finished 🍲 is Yotam Ottolenghi‘s Legume (Noodle) Soup full of beans, split peas, pasta, spinach & herbs. A bit of a pain to make with extra steps but I modified it slightly & the taste more than makes up for it.😋 On the blog for #soupersundays link to recipe👇🏻

The finished Corn-And-Cheddar Chowder-my late lunch & blog post for #soupersundays 🍲😋It‘s very rich & tasty, the sharp white cheddar cheese is delicious with the sweet corn & creamy potatoes. Here with one of my current reads for a book tour review later this week. It‘s a YA historical & I am just a couple of chapters in but hoping to read more tonight. I can‘t tell you how happy I am that I don‘t have to work tomorrow.🤗 Link to soup recipe👇🏻

I lost my library e-book on this one without finishing it so I had to wait for my hold to come back in. I got a couple of chapters in over a late lunch of Ottolenghi‘s Tomato & Sourdough Soup with Whipped Feta & Sumac Dip. Both recipes are very easy & delicious & on the blog for #soupersundays. Finished soup: Emerald Corn Chowder with Roasted Tomatillos & Poblano adapted from a Rick Bayless recipe. I added hominy & cauliflower rice for bulk.😉Easy as the tomatillo salsa does much of the flavor work as does the poblano. Tangy with the right amount of heat at the end, it‘s a good summer vegan chowder. I topped it with diced avocado, toasted pepitas & cilantro. Here with a current read for review later in the week. Today‘s no-cook, cold & vegan is this “Best Gazpacho” — a Seville-style gazpacho, rich & delicious. It‘s way too humid to cook today—this soup just required some chopping, blending & chilling. It was lunch with a few chapters of this #ARC I am reviewing later this week.
