This has inspired me to be more plant-based in my eating. I made two of the recipes, and they did need a little doctoring.
My finished soup & blog post for #soupersundays is the Tomato Pasta Soup from the tagged cookbook. This soup is from the Ikiaria, Greece zone & it‘s thick, creamy, vegan & very low effort. Takes less than 30 minutes to make & if you use canned tomatoes, no chopping needed. It‘s the 2nd recipe I‘ve made from the book. Link to recipe is below.
I reviewed this plant-based cookbook and wellness resource this week on a book tour & I‘m really enjoying it. There are 100 recipes from the 5 blue zones in Italy, Costa Rica, Greece, Japan & California. Published by National Geographic means that the photos of the recipes, ingredients, people & recipes are gorgeous. For my review I made the Coconut Chia Pudding from Loma Linda, CA & I‘m posting a soup from Greece today. Link to review/recipe 👇🏻
I watched the Today Show and they had a story about this cookbook. I thought I‘d order it for my daughter for Christmas, only to find that it was sold out online at Amazon, Barnes and Noble, Powell‘s, BookDepository, etc. I finally found it in a Barnes and Noble in Springfield IL, which is where my daughter lives. Had her pick up two copies - by the time I found it I wanted a copy too!
