As mentioned in our latest episode, here is the sourdough loaf I just baked! Looks good but it was hard as a rock after an hour. Probably something to do with proofing at altitude. Let me know if you have any tips or tricks.

thebacklistbook Increase the sugar used to proof. Or adjust your baking time and temperature. The lower the temp typically keeps a loaf softer. Failing that switch to using bread machine yeast and a mixer revolving with dough hook on lowest speed for 20 minutes instead of kneading. And doing the rise in a warmed environment can help too. 2mo

There‘s been plenty of preserving and a decent amount of baking in my home recently, but I haven‘t been making any new cookbook recipes. So, today I‘m sharing this year‘s final batch of candied jalapeños, a few jars of tomato sauce, and these cinnamon rolls even if they are online recipes. Since the sourdough cinnamon rolls are from the Clever Carrot blog, I‘m tagging Emilie Raffa‘s cookbook.

I‘ve really been enjoying trying more recipes from this cookbook since I got a print copy. Yesterday, I made brioche rolls modified by adding some instant yeast to speed up the process, but I‘ll be making them again as pure sourdough. Then, we used them as sandwich rolls for the smoked BBQ beef made by my brother-in-law & nephew for supper. Absolutely delicious!

This is definitely my favorite sourdough cookbook. I mixed up the dough for these overnight baguette twists yesterday afternoon, shaped them early this morning, and baked them before leaving for church. The recipe is simple and delicious!

Daisey @Deblovestoread There is a lot of conflicting info, but this book is less complicated than many. I‘ve had my sourdough for 30 years now and am still learning different methods. The main thing I like to remember is that it has been used for hundreds of years. It doesn‘t always work perfectly, but it also doesn‘t have to be that complicated. 8mo

Yesterday I made the jalapeño cheddar sourdough from the tagged cookbook. I shaped one larger loaf and a few of these small rolls as well. The combination made for an amazing sausage and egg breakfast sandwich along with the chipotle mayo I made as well.

I‘ve seen several recipes for chocolate #sourdough and always thought it sounded strange, yet it also made me curious as well. With another snow day yesterday, I decided to try the chocolate focaccia in this #cookbook. The recipe said to bake in a large cast iron skillet. I made a large and small, but I think it would look more focaccia like if I‘d made two large. It‘s perfect with a smear of Nutella and a morning cup of coffee.

Daisey @jenniferw88 @Tamra @BethM Thanks! Yes, it‘s delicious and does taste like chocolate. It‘s fascinating because it has the chewiness of sourdough with only 1 tbs. honey for sweetener, approximately 1/4 cup cocoa, and chocolate chips. I‘ve been making sourdough a long time, but this was definitely something new! 11mo

Daisey @mabell It‘s delicious! I‘ve been making sourdough a long time, and it can definitely have its quirks. If you‘re looking, this cookbook is great and the author‘s blog the Clever Carrot has some sourdough resources as well. 11mo
Daisey @Tamra I probably would recommend getting started with sourdough when it‘s warmer, but it just takes more patience with cooler temperatures. My house is never above 70 in the winter. 11mo

Most of the time I use recipes from family & friends or find new recipes online. After having a #sourdough starter for over 25 years, I often adapt bread recipes myself. However, once in a while I still appreciate a #cookbook and recently took some time to read through this one. I‘ve made the Soft Honey Whole Wheat and the Sunday Morning Bagels (this morning), and both recipes turned out wonderfully. I‘ll be trying more of the recipes.

A tiny little #ebook available on #hoopla. My cousin gifted me some sourdough starter and I'm trying to educate myself in the ways of the mother dough. 😍
So far I'm still baby-ing the starter and haven't baked bread yet. However, I've made crumpets from my discard and will be attempting crackers tonight from it. Fellow sourdough enthusiasts here? 🍞 #nonfiction
