Deep Run Roots
Deep Run Roots: Stories and Recipes from My Corner of the South | Vivian Howard
27 posts | 10 read | 17 to read
Vivian Howard, the star cocreator of PBS's A Chef's Life, celebrates the flavors of North Carolina's coastal plain in more than 200 recipes and stories. Vivian Howard's new classic of American country cooking proves that the food of Eastern North Carolina--her home--is as rich as any culinary tradition in the world. Vivian grew up in a farming community called Deep Run, and she left as soon as she could. She had big dreams that didn't seem to fit in a place with more pigs than people. But after she trained in some of New York's finest kitchens, her family made her an offer she couldn't refuse: the chance to build a restaurant of her own... back home in North Carolina. Ten years ago, her restaurant Chef and the Farmer put the nearby town of Kinston on the culinary map. But opening an ambitious eatery in a town paralyzed by recession wasn't easy. Instead of hopping on the latest food trends, Vivian focused on rural development: If you grew it, she'd buy it. Inundated by local sweet potatoes, blueberries, shrimp, pork, and beans, Vivian learned to cook the way generations of Southerners before her had, relying on resourcefulness, creativity, and preservation. As much a storybook as it is a cookbook, Deep Run Roots imparts the true tale of Southern food: rooted in family and tradition, yet calling out to the rest of the world. Organized by ingredient with dishes suited to every skill level, Deep Run Roots features time-honored simple preparations, extraordinary meals from Chef and the Farmer, and stories that bring to life the power of tradition and the pleasure of reinventing it. Here, home cooks will find photographs of every single recipe-alongside the powerful taste of being home. Like The Fannie Farmer Cookbook, The Art of Simple Food, and The Taste of Country Cooking before it, this is a landmark work of American food writing that gives richness and depth to a cuisine that has been overlooked for far too long. Recipes include: * Family favorites like Blueberry BBQ Chicken, Creamed Collard-Stuffed Potatoes, Fried Yams with Five-Spice Maple Bacon Candy, and Country-Style Pork Ribs in Red Curry-Braised Watermelon, * Crowd-pleasers like Butterbean Hummus, Tempura-Fried Okra with Ranch Ice Cream, Pimiento Cheese Grits with Salsa and Pork Rinds, Cool Cucumber Crab Dip, and Oyster Pie, * Show-stopping desserts like Warm Banana Pudding, Peaches and Cream Cake, Spreadable Cheesecake, and Pecan-Chewy Pie, * And more than 200 other dishes that will send you straight to your kitchen. --- Interior photographs by Rex Miller/ Jacket photographs by Stacey Van Berkel Photography

Watching episode 7 of The Chef‘s Life with #VivianHoward — I‘m in the middle of it when they show for a few seconds a shot of the farm of a grape provider and there‘s a humongous confederate battle flag tacked to the wall. This was shot in 2013. Why include it? It really was gratuitous.

Some days you get lucky with thrifty book finds.....50 cents for this beautiful Vivian Howard cookbook that focuses on her food roots in SE North Carolina. Just paging through it I can already tell it‘s a gem. Pecan Chewy pie, watermelon iced tea, chicken & rice, BLT dip......yes please!

Lcsmcat If you ever are anywhere near Kinston, NC, get a reservation at Chef & the Farmer! (And book early- they fill up fast.) 3y
intothehallofbooks YES!!! Have you watched her TV show A Chef‘s Life? It‘s so good, especially if you‘re interested in SE NC food and the stories behind it. 3y

Tamra @EvieBee it‘s always fun to snag a deal! 3y

📘 Love the cookbook from Vivian Howard. The chef from the PBS series A Chef's Life.
📘 Downton Abbey
📘 Not a big snacker. I normally drink tea or coffee when I read.

“As for those other items that masquerade as butter, I‘m working to rid the world of them. . . I don‘t have the word *organic* tattooed on my body. I usually buy organic meats and produce, but not always. Most farmers I work with are not certified organic but many of them farm organically. I know they‘re growing food they‘d feed their families and that‘s good enough for me.”

I've been reading this all Summer. Vivian writes about the local history of the ingredients and then gives traditional and revamped recipes. I like reading about her parents, especially her father. I did make the turnips and greens, and they were quite tasty, but I haven't really been into cooking lately. The show Chef's Life on PBS is a must see.

Librarianaut Her restaurant is .amazing. ! 7y
bookwrm526 She was at an event at my local library recently but I just missed getting a ticket :( 7y
Wife @bookwrm526 How disappointing 😕But that gives me an idea to see if she posts a touring schedule 🤔 7y

I had dinner at Vivian Howard's restaurant, Chef & the Farmer, tonight. It was amazing food and extremely friendly service. A real gem! Hubby and I had bar seats watching the line cooks get all the yum put together- it was really fun.

Graciouswarriorprincess Fun! I was planning on there in July with my boyfriend. 7y

This is a #cookbook, but it's more than that. Beautiful photographs of food on the plate and on the farm are interspersed with the chef's memories of growing up in rural NC. She came back after training and working in New York and now owns a farm-to-table restaurant near me that is so popular people make reservations months in advance. #riotgrams @Liberty

Graciouswarriorprincess Where is the restaurant? 7y
Lcsmcat @Graciouswarriorprincess It's in Kinston of all places. It's called Chef and the Farmer and it's worth the wait to get reservations! 7y
Graciouswarriorprincess @Lcsmcat Thank you. I will have to check it out.👍🏻😃 7y
alleyfam51699 I've been debating on whether or not to get this. I love watching her show and want to eat at the restaurant one day. 7y
Leigh0906 @Lcsmcat I used to live nearby- my meal at Chef was only so-so, but the food at her other restaurant, the Boiler Room, was amazing! If you live in the area, her former sous chef opened a place right outside of Wilson, called SoCo, that is one of the top 5 meals I've ever eaten! 7y

I've read this one several times, and I'm going through it again tonight. To be honest, I worked at the restaurant for a couple years during the development of this book. Some of it is a trip down memory lane, some of it is appreciating the stories Viv weaves, and some of it is just inspiration. Everyone can love this book and enjoy the stories and food.

SharonGoforth I received this as a Christmas gift from my daughter, and I love it! 7y

Made my first dish from my new cookbook! This is Brussels Sprouts, Apples and Pomegranate with Blue Cheese Honey Vinaigrette. It is pretty tasty, if I do say so, and will be even better tomorrow! #bookanddinner

8little_paws Oh this sounds fantastic!! 7y
SharonGoforth Thanks! I've never made a vinaigrette before, and this turned out great! I'll be using it for a lot of salads. This salad also has radishes and scallions in it. Probably more summer fare, but I just had to try it! 7y

Bostonmomx2 I'm not a huge fan of Brussels (or most veg 😕) but this sounds great!! 7y
Bostonmomx2 Is this cookbook vegetarian? Or worse (for me lol) vegan? Lol 7y
Kimzey Sounds like a winner! I love Brussels sprouts. 👍🏼❣ 7y
SharonGoforth @Bostonmomx2 Nope, not vegetarian or vegan! I didn't think I would like the Brussels sprouts either, but the vinaigrette keeps it from tasting bitter. It's really good! 7y
SharonGoforth @Kimzey Then you would love this 😊 7y
Beckys_Books I eyed this at the bookstore today, but didn't pull the trigger. Regret. 7y
SharonGoforth @Beckys_Books It hasn't been out too long, so it will probably be around for a little while 😊 7y
Bostonmomx2 @SharonGoforth I'll have to go look at it. I hesitate buying cookbooks because I'm not a big fan of being in the kitchen and there are so many free recipes online that I feel bad buying them lol 7y
SharonGoforth @Bostonmomx2 And they take up a lot of room, too! She probably has a website 😊 7y
Gulfsidemusing This looks good! For @Bostonmomx2 , if recipes aren't online, I will borrow cookbooks from the library and test a few recipes. Helps me decide whether or not to purchase. 7y

My Christmas gift from my daughter 😊. It was what I asked for, since a goal of mine in 2017 is to move to NC where my daughter and her family live. I thought it might be a good idea to learn about the region's food, and this book looks like it will do the job. It is gorgeous, and has recipes for all experience levels. They sound wonderful, and I can't wait to try them.

BookishMarginalia Good luck with the cooking --and the move! 7y

Cooked from this one for a dinner party last night and each recipe was a total winner. Charred Cabbage and Apple Slaw. Brussels Sprouts Salad with Blue Cheese Dressing, and Whole Rainbow Trout. Oh and, we had bourbon cocktails, in keeping with the Southern theme.

A beautiful book of recipes and essays-- sorted by ingredient, Howard writes about her life and how each ingredient attaches to her love for Eastern North Carolina. Recipes are from her acclaimed North Carolina restaurant, The Chef and the Farmer and are suited to all skill levels. Most importantly, each recipe has an image. A giant book of pure joy and happiness and full of Southern family tradition.
