Mastering bread and pastry at home, from sourdough to pizza, croissants to doughnuts. Best known for Justin's world-famous doughnuts, the Bread Ahead Bakery in Borough Market is also home to their Bakery School, where thousands have learned to make sourdough, croissants, Swedish ryebread, pizza and much more besides. Now, using this book, you can too, from the comfort of your own home. Divided into sections including English, French, Italian, American, Eastern European and Nordic baking, there are also chapters on sourdough, gluten-free baking and flatbreads. Last but not least, there is of course a chapter on doughnuts - everything you need to know to make Justin's famed 'pillows of joy', from the classic vanilla custard to salted honeycomb.

I think i'm going to bake this entire book in 2021! Today's reading snack Bara Brith - a Welsh inspired fruit tea loaf ( except I don't like tea - so I soaked the fruit overnight in Mr K's whiskey rather than Earl grey tea!)

Our first sourdough loaf! We‘ve made our own starter ( which we‘ve yet to name @Oryx !) and been nursing it for 10 days and finally got to the best bit today - the house smelling of bread 🤩

One of my 2021 goals is going to be (I think!) ‘ stay engaged‘. So to help that I‘ve just signed up to Baking school- a year long online flexible course that gives you unlimited access to classes on sourdough, rye, doughnuts, saffron buns, chocolate cake the lot! As many courses as I want to log into and just £125 for the year. 2021 is the year of baking!
