For someone like me who wants to cook well, this cookbook is a welcome addition to my kitchen. By breaking recipes down into salt, fat, acid and heat, chef and author Samin Nosrat brings professional ideas into the home. These recipes and techniques go a long way in helping me understand good cooking philosophy and how to put it into practice. It is also beautifully illustrated by Wendy MacNaughton, adding visuals to your cooking journey.

SW-T I wasn‘t crazy about roast chicken before this book and now I make it all the time. Her book is now in my frequent use stack. 3mo

IndoorDame I loved this so much! I haven‘t tried any of her recipes yet, though I‘ve earmarked some I‘m interested in. But I have taken her basic principles (especially about using acid) to help me be more adventurous when throwing things together in the kitchen. I used to do a lot of kitchen sink cooking when I was younger, and I‘ve shied away from it in recent years but, this has let me get back to that style a bit. 11mo
Bookwormjillk I‘m still working on this, but hopefully will finish tonight (wild New Year plans I know.) I started reading this earlier this year and loved her Caesar salad recipe. So much lighter and more flavorful than what the usual restaurant salad is. Actually I should make it again this week. DebinHawaii I really enjoyed it & tagged many recipes although I have not tried them yet. I have the Caesar Salad recipe tagged—along with several other salad, dressing, sauces & soup recipes. I have always been a “toss everything together” kind of cook & it usually turns out well, but she has me thinking more mindfully about it & having more intention with my ingredients. I also loved all of the graphs & flavor combination ideas! 😋 11mo

The downside to having an immense cookbook collection (besides space issues) is that often, cookbooks sometimes get stuck on a shelf & don‘t get read & appreciated. This was the case with this book which I bought after it came out based thanks to NPR & Saveur but never really read until it was a December book for #Naturalitsy #MidwinterSolace What a mistake! I just rated it ⭐️⭐️⭐️⭐️⭐️ & it ⬇️

DebinHawaii …will be moved to a more accessible place of honor. I have been meandering my way through it over December & have SO many pages & recipes tabbed & tagged. Although some of the information, I knew, Nosrat taught me a lot & shares her knowledge in an engaging way. I love learning the how & why of cooking & flavor science. I am now in the midst of watching her show on Netflix & will try several recipes & techniques from the book. Excellent! 🍽️🥣💙 (edited) 11mo

I really enjoyed this book! I want to buy a physical copy of it so I can refer to it easily when cooking. I learned so much about salt and acid that I started to implement the tips into my cooking. I also listened to the audio while reading the ebook and it was so much fun! Samin Nosrat narrates it and she is a great storyteller!

1. I didn‘t set a numeric goal this year, but I did pretty well with challenges. I completed #pantone2023 and #booked2023 I read most of my #bookspin / #doublespin and #authoramonth books. I did abandon #roll100 fairly early, & eventually bailed on my year-long buddy reads of Clarissa & Les Miserables

2. 5⭐️ reads for December were Sing Unburied Sing and the tagged book

My #bookspin this month was the #naturalitsy buddy read, and it‘s been great! In the intro Samin brags that reading her book is more like attending a cooking class than reading a cookbook, and that claim is totally born out. But what impressed me most is that she‘s a teacher who teaches to beginners and experts at the same time which is such a rare talent! I learned a lot from this, and I‘ll definitely use it as a reference book going forward.

TheAromaofBooks I enjoyed this book so much when I read it from the library that I bought my own copy for reference! Honestly, I was kind of scared of salt before I read this and have been amazed at how much better some of my staple dishes taste now that I'm willing to give them a bit more of a salt hit! 11mo

Someone (I think from the Eastern European side of my family) taught me to soak raw onion in water to lessen the bite, which is totally a good trick, but the number of times I‘ve heard Samin say to macerate onion in vinegar or citrus in the last few recipes… I can taste the difference in my head without even having done it yet! This one is going to stick with me! #naturalitsy

Larkken I had a hard time getting into this about a year ago - I think I was expecting a more traditional cookbook? So I borrowed the audiobook on a whim this time since I wasn‘t expecting a bunch of recipes and really enjoyed it! Now I have a better feel for what to revisit to get more concrete advice or tips or whatever. Glad this challenge gave me the push! 11mo

Bluebird I loved this book! The author narrated the audiobook. Her enthusiasm was infectious! Not sure I would have read the whole thing in print/digital version. I‘m not much of a cook, but I may start doing more-she has motivated me. I have issues with her aggressive use of salt, but appreciate all the information. I went out and bought the book—it‘s a great reference. I also bought a copy for a friend 😉 11mo

Fabulous book! I‘m not much of a cook, but this author makes me want to pull out my apron and spend more time in the kitchen! Highly recommend the audio—the author‘s enthusiasm is infectious! I had to go out and buy the print book. It‘s a wonderful reference!

My husband and daughter got me this cookery chunkster for Christmas and I'm thrilled to finally own this as I've coveted it for a long time. My sister exclaimed, "But you don't like cooking!" ? I was forced to explain that liking cooking and liking cookery books are completely separate things!

I really like this cookbook. It‘s readable and lovely and full of good information that has improved my cooking. I give it 5 Stars. Samin Nosrat‘s voice is so strong and fun to read. It really is like watching the Netflix series based on this cookbook. And the illustrations are just fantastic. So it totally makes sense to me that this book is highly rated on GoodReads. I‘m looking forward to re-reading and trying the recipes in the coming months.

Hubby finally took the hint and gave me this as a Christmas gift. I‘ve only been asking for it for two years😂 As much as I loved the tv series, I already think the book is better. The writing is wonderful. I‘m sooo tired, but I don‘t want to put this down.

Verdict on two similar cake recipes: Samin Nosrat is the winner by a slight margin with Lori‘s Chocolate Midnight Cake. The biggest difference in the end result has to do with prep method. Crazy Chocolate Cake is done in one bowl so it‘s very quick to make. Light-coloured crumbs showed that mixing was not thoroughly done. It rose higher, was slightly sweeter and less moist than LMCC. LMCC used more bowls & implements; results are worth it.

Lindy @TheKidUpstairs It was a dear friend‘s birthday. Indoor gatherings are fraught, so there were only 4 of us (2 couples). We sang happy birthday very softly. Heather removed each of the (oversized) candles individually to blow them out without blowing on the cake itself. Friendship is one of the best things in life. 4y
Lindy @readordierachel @Sace @Reggie Apple juice caramel is so easy (and I have many litres of juice from my tree, currently in the freezer). Boil 4 cups of juice until only a half cup is left, then stir in 2 tablespoons of butter and a pinch of salt. 4y

I would never have found this book without Litsy, so thank you to everyone who reviewed it - I absolutely loved this one! I am not an instinctive cook, so the way this book breaks down cooking to four basic elements really appealed to me. Definitely see myself referencing this one regularly.

I so enjoyed her warm, helpful voice throughout the book - she never came across as condescending, but instead seemed genuinely excited to share the information. She explains “basic“ things without making me feel stupid for not already knowing the information. 4y

#BookReport - This week got a little crazy, but I still managed to wedge some reading in!! I read the first two books from the David Raker series, but decided not to continue on. While decent mysteries - and I like Raker as a character - both books were about a completely sadistic psychopath and just... sometimes people who disappear haven't been kidnapped by someone who likes to chop people up, you know? I bailed on The Castle in the Attic, ⬇

TheAromaofBooks (cont'd) it wasn't a bad book, it just wasn't for me. I've owned it since 2004, so at least it can finally head off to the giveaway bin! Just started House of Dreams this morning, and I'm still working on the tagged book and P&P, although I'm pretty behind on the latter!! Work is still ramping up, so I probably need to adjust my reading expectations somewhat...

TheAromaofBooks @rabbitprincess - Same!! Luckily these didn't really spend a lot of time with the killer, and they didn't get overall graphic with the details but still... I just wasn't expecting a protagonist who looks for missing people to only find the missing people at the mercy of creepy serial killers! 4y

Today is so hot and humid- the blistering kind. The kind that has my face in a fan. That kind that has sweat rolling off me. Despite all that, cooking from this book tonight. Just her basic pasta sauce. Garden tomatoes, basil, lettuce for salad from my neighbor‘s garden.
Saw her show when it came out a few years ago. She was wonderful!
